2 tablespoons coconut oil
1 cup granulated sugar
1/2 cup unsweetened applesauce
2 tablespoons unsweetened almond milk
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 325 degrees (F). Line two large baking sheets with parchment paper; lightly spray them with non-stick spray and set aside.
  • Place 1 cup of the semi-sweet chocolate chips in a small, microwave safe bowl; add in the coconut oil and heat them in the microwave on low power for 15 second increments of time, mixing in between each, until they are completely melted and can easily be whisked smooth. 1 scant cup ground sunflower seeds (or almond flour)

1/4 tsp espresso powder ((optional, but recommended))
3 1/2 tbsp nut/seed butter (of choice)
1 1/2 tbsp coconut oil (melted)
1 tsp vanilla extract
