2 cups shredded zucchini
1/2 cup shredded cheddar cheese
1/3 cup biscuit/baking mix
2 tablespoons grated onion
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 eggs, lightly beaten
2 tablespoons butter

Steps:

  • In a bowl, combine first seven ingredients. Stir in eggs; mix well. Shape into six patties, using about 1/4 cup of zucchini mixture for each patty. , In a skillet, melt butter; cook patties for 4-5 minutes on each side or until lightly browned.

3 1/2 cups grated zucchini
3 tablespoons grated onions
2 tablespoons minced parsley
1/3 cup freshly grated parmesan cheese
1 cup soft breadcrumbs
1/4 teaspoon pepper
3/4 teaspoon salt
2 eggs, well beaten
fine breadcrumbs
melted butter

Steps:

  • Preheat oven to 350* After grating zucchini, squeeze out as much liquid as possible with hands.
  • Combine zucchini, onion, parsley, cheese and 1 cup bread crumbs with salt, pepper and eggs.
  • Shape into patties and cover with fine bread crumbs.
  • Place on well greased cookie sheet and brush with melted butter.
  • Bake for 30-40 minutes or until golden brown.
  • You can fry these patties in a skillet with butter, if desired.

I LOVE zucchini and this recipe in particular. I am posting the original recipe from Allrecipes.com with my initial adjustments. However, it is extremely versatile! I have made it tossing in shredded carrots, shredded Summer Squash, corn, peppers, different cheeses, and various spices! It has been a winner EVERY TIME! These are great warmed up the next day for breakfast too! The ONLY draw back, I have not been able to make them successfully without frying them. :( I tried with PAM but it didn't work.

- 2 cups grated zucchini (or various vegetables; carrots, corn, etc)
- salt
- 2 eggs, beaten
- 1/2 cup chopped onion
- 1/2 cup all-purpose flour
- 1/2 cup grated parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons vegetable oil

Steps:

  • Spread zucchini. Lay out on paper towels or in a colander (with a bowl under it), sprinkle zucchini with salt and let rest for at least 30 minutes (I get best results when I let it sit for several hours). This step pulls out excess moisture from the zucchini/squash.
  • In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese (add seasoning at this time as well if you desire).

I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy! P.S. 8-7-09 I have been making this for over 30 yrs. and have never had a problem with watery zucchini. Might just be a climate issue.

1 medium onion, coarsely grated
1 tablespoons kosher salt, plus more
1 leek, white and pale-green parts only, finely chopped
1 large egg, beaten to blend
1/3 cup panko (Japanese breadcrumbs)
2 tablespoons finely chopped fresh cilantro
1 tablespoons finely chopped fresh thyme
Freshly ground black pepper
Vegetable oil (for frying; about 1 1/2 cups)
Roasted Red Pepper Labneh

Steps:

  • Mix zucchini, onion, and 1 tablespoons salt in a medium bowl. Let sit 10 minutes, then wring out as much liquid as possible from zucchini and onion in a kitchen towel. Mix with leek, egg, panko, cilantro, and thyme in a clean medium bowl; season with pepper.
  • Pour oil into a large skillet, preferably cast iron, to a depth of 1/2" and heat over medium heat until oil bubbles when a pinch of zucchini mixture is added.
