½ onion, chopped
1 (10 ounce) package saltine crackers, crushed
salt to taste
¼ teaspoon ground black pepper
1 tablespoon steak sauce
2 eggs
¾ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, onion, crushed crackers, salt, ground black pepper, steak sauce, eggs and water and mix well. Transfer to an ungreased 9x13 inch baking dish. Form into a loaf about 6x10 inches.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until center is completely cooked.

Meatloaf:
1 1/2 pounds ground beef
1 egg
1 medium onion, chopped
1 cup milk
1 cup dry breadcrumbs
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared mustard
8 ounces pappardelle pasta
1 3-ounce mozzarella ball
1 can pitted large black olives
Sauce:
3/4 cup ketchup
3/4 cup water
1/4 cup brown sugar
1/2 teaspoon prepared mustard

Steps:

  • To make the meatloaf:
  • 1. Heat the oven to 350°F. Lightly oil a 10 x 13-inch (or 10-inch round) baking dish. Combine the meat, egg, onion, milk, breadcrumbs, salt, and pepper in a large bowl. Shape the mixture into a 10-inch round dome and place it in the baking dish. Mix the 1/3 cup ketchup, 2 tablespoons brown sugar, and 2 tablespoons prepared mustard in a small bowl until blended. Spread the mixture over the meatloaf. Bake for 1 hour. Transfer the meatloaf to a wire rack and let rest for 20 minutes.
  • 2. Cook the pappardelle according to the package directions; drain and keep warm while meatloaf rests.
  • To make the sauce:
  • 1. Combine all the ingredients in a small saucepan. Cook over medium heat, stirring, until bubbly and thickened, about 3 minutes. Keep warm until ready to serve.
  • 2. Remove the meatloaf from the pan and place on a serving plate. Cut the mozzarella ball in half. Layer the pasta strands one by one over the meatloaf to look like a mummy's wrappings, adding the mozzarella and two olives for eyes as shown. Surround the meatloaf with more olives. Serve with the sauce on the side.

1/2 lb ground Italian sausage
1/2 lb ground turkey
2 slices multi-grain bread
1 carrot
1 large egg
1 small onion
1/2 cup cooked spinach, drained
1 tablespoon catsup
2 tablespoons apricot jam or 2 tablespoons jam
1/2 teaspoon curry powder
1 teaspoon black pepper
salt

Steps:

  • Preheat oven to 375°F Dice carrot and onion and steam in the microwave to cook. Cooking time depends on microwave size/power. Steam carrot and onion until tender. Drain.
  • Tear bread slices and process in the food processor until it is crumbs. Add crumbs to a large mixing bowl. Add both meats, egg, carrot, onion, cooked spinach, salt, pepper, and curry powder. Mix using your hands.
  • I like to use a cupcake pan. Spray each cupcake hole with cooking spray and distribute meat mixture in each hole (it will probably fill 5-6 mini meatloaf cupcakes.
  • Mix the jelly and catsup and spread over the top of each cupcake.
  • Bake until cooked through approximately 20 minutes.

3 lb hamburger
1 egg, beaten
1 sleeve ritz crackers
1/2 c or less of milk, to moisten
1/4 c catalina dressing
salt and pepper to taste
1/2 c lite brown sugar, divided in half
1/2 c ketchup
1/2 onion, diced
1/4 c crumbled, cooked bacon

Steps:

  • 1. Preheat oven to 375*
  • 2. Mix the hamburger, egg, onion, crumbled bacon,crushed Ritz crackers, salt and pepper, salad dressing, 1/4 c. of the brown sugar and milk together in large bowl.
  • 3. Arrange meatloaf in pan of choice. *NOTE: I use a large glass baking dish and arrange it in an "O" shape. That way it doesn't take the middle so long to cook.
  • 4. Mix ketchup and the remaining 1/4 c. of brown sugar and "glaze" the top of the meatloaf.
  • 5. Bake for 45-1 hour. Meatloaf is done when the inside is no longer pink, and has an internal temp of 160*
  • 6. *NOTE: I don't usually measure things so the amounts are approximate. If something seems a little off, please feel free to adjust it. If it's too sweet for your liking omit the brown sugar inside the meatloaf

1 (8 ounce) can tomato sauce
1 teaspoon mustard
1 tablespoon Worcestershire sauce

3/4 cup bell pepper, chopped
4 slices bacon, cooked crispy and crumbled
1/4 cup barbecue sauce
2 tablespoons butter, melted
salt & pepper
2/3 cup catsup
1 (8 ounce) can tomato sauce

Steps:

  • Mix ingredients well and pour into 9 x 13 dish.
  • Top with Catsup and tomato sauce.
  • Bake at 375 degrees for 1 ½ hours.
  • Note: I pour off most of the liquid after it has cooked for about an hour.

I found a meatloaf recipe that used StoveTop Stuffing. I really liked it, but tweaked it to make it my own. Here is my version! (For appetizers, you can make these into meatloaf balls and use decorative appetizer picks to serve)

1 lb lean ground beef
1 (120 g) box Stove Top stuffing mix (turkey)
1 large egg
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1/2 cup ketchup, for the top (approx.)

Steps:

  • Add the beef, egg, 1/4 cup of ketchup and Worcestershire sauce in a large mixing bowl. Mix until well blended. Add the stuffing mix to the raw beef mixture. Mix until the stuffing is completely blended into the beef mixture (I find using a clean hand to mix the beef and stuffing to be the best method). Form mixture into a log shape and put on baking sheet lined with parchment paper. Drizzle lots of ketchup over the top of the log. Bake in oven at 350 degrees until done (around 45 minutes - depending on the oven. Check periodically with a meat thermometer to ensure it is cooked thoroughly).
