Step aside Mimosa! This is a great (alcoholic) brunch drink. Prep time does not include chilling of peach nectar and champagne.

These bellinis are a bit too sweet for my taste. I think I'll try reducing the amount of peach puree next time.

I'm not a big fan of bellinis, but I really enjoyed these. They're not too sweet and the peach flavor is really delicate.

I made a few substitutions and they still turned out great. I used frozen peaches and a different type of sparkling wine.

I was a bit skeptical about making my own bellinis, but this recipe made it so easy. They turned out perfectly and tasted just like the ones I've had at restaurants.

I've made these bellinis several times now and they're always a crowd-pleaser. The sweetness of the peaches pairs perfectly with the acidity of the sparkling wine.
