Cajun Gingerbread image

2 eggs
3/4 cup dark brown sugar, packed
3/4 cup light molasses
3/4 cup butter, melted
2 1/2 cups all-purpose flour
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup boiling water
1 cup pecans, chopped

Steps:

  • Beat eggs, brown sugar, molasses and melted butter together.
  • Mix together dry ingredients and add with the boiling water to first mixture.
  • Beat well, then pour into a well greased 13x9x2 inch baking pan.
  • Bake in preheated oven at 350F for 35 minutes.
