Crumbs-Topped Coffee Cake image

Number Of Ingredients 14

TOPPING
1/2 cup Kellogg's® corn flake crumbs or 2 cups Kellogg's® corn flakes (crushed to 1/2 cup)
1/4 cup sugar
1/2 teaspoon cinnamon
2 tablespoons margarine or butter, softened
CAKE
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1 cup Kellogg's corn flake crumbs or 4 cups Kellogg's® corn flakes (crushed to 1 cup)
1 cup milk
1 egg
1/4 cup shortening

Steps:

  • 1. Mix first 4 ingredients together until combined. Set aside for topping.2. Stir together flour, baking powder, salt and the 1/4 cup sugar. Set aside.3. In large mixing bowl, combine the 1 cup KELLOGG'S Corn Flake Crumbs, milk, egg and shortening in large mixing bowl. Beat well. Add flour mixture, stirring only until combined. Spread batter evenly in 8 x 8 x 2-inch baking pan coated with cooking spray. Sprinkle topping over batter, pressing in gently.4. Bake at 400°F about 25 minutes or until wooden pick inserted near center comes out clean. Cut into squares. Serve warm.
