Categories     Condiment/Spread     Vegetable     Side     Braise     Christmas

Number Of Ingredients 7

2 pounds (1 kg) red cabbage, shredded
2 apples (I use Pink Lady or Gala), peeled and coarsely shredded
2 tablespoons butter
1 cup apple cider vinegar
1/2 cup red currant juice (the real thing, no high fructose corn syrup stuff)
1 cup sugar
1 teaspoon salt

Steps:

  • Mix all ingredients in a large pot over medium high heat. Bring to a boil, lower heat and simmer cabbage for 1 hour and 15 min., stirring often. Cool cabbage and transfer to clean jars, refrigerate. Cabbage can be stored, refrigerated for up to two weeks.

I'm not a big fan of red cabbage, but I really enjoyed this dish. The sweetness of the apples and raisins helped to balance out the bitterness of the cabbage.

This dish is a great way to use up leftover cabbage. I always have a head of cabbage in my fridge, so it's nice to have a recipe that I can use to use it up.

I love the combination of sweet and sour in this dish. The apples and raisins add a nice touch of sweetness, while the vinegar and spices add a bit of tang.

I'm not sure what I did wrong, but my cabbage turned out mushy. I think I cooked it for too long.

I followed the recipe exactly and the cabbage turned out too sweet for my taste. I would recommend using less sugar next time.

This Danish red cabbage was a hit at our Christmas dinner! The sweetness of the cabbage paired perfectly with the tangy sauce. It was a great side dish to our roast pork.
