Fried zucchini slices image

A yummy side dish that I serve w/ pizza or spaghetti sauce for dipping.

Number Of Ingredients 8

1/2 c italian-style bread crumbs
1/2 c grated parmesan cheese
1 tsp garlic salt
2 eggs
5 Tbsp oil, i used canola
1 large zucchini, cut into 1/4" slices
1 c shredded mozzarella cheese
1 c pizza or spagheeti sauce, i used prego marinara

Steps:

  • 1. In shallow bowl, combine bread crumbs,parmesan cheese and garlic salt, mix well. In another shallow bowl, beat eggs. Heat oil in deep skillet over med-high heat.
  • 2. Dip zucchini slices into egg, then into breadcrumb mix. Lay in single layer in oil, do not crowd. Fry 3 mins, turn over and sprinkle w/ mozzarella cheese, fry 2-3 mins more.
  • 3. Drain on paper towels. Serve w/ sauce for dipping.
