The strength of this tea is a matter of individual taste. Sometimes when I have a cold or the flu, I put a pot on in the morning and let it simmer throughout the day. Every time I pour myself a cup I just add more water to the pot (the ginger root still has a lot of flavor in it).

- In a small saucepan, combine the ginger root and water, bring to a boil and simmer for ten minutes. Taste and if it tastes too weak, continue simmering; if it tastes too strong add more water. Strain and sweeten with honey to taste.
