Mashed Cauliflower with Parmesan image

About a year ago when our daughter came to stay while her husband was in Korea...I was fixing dinner and I wanted to fix Cauliflower...Which my daughter didn't want to eat...I decided I would fix it anyway instead of potatoes...I would mash Cauliflower and put Parmesan Cheese in it...Well I didn't tell her that it was Cauliflower...

I'm not a huge fan of cauliflower, but I really enjoyed this dish. It was a great way to sneak in some extra vegetables.

I added some roasted garlic to this recipe and it was amazing! It gave the mashed cauliflower a really nice depth of flavor.
