Time 1h

Number Of Ingredients 7

1 1/2 c sugar
1 3/4 c crushed pineapple, undrained
3 eggs, slightly beaten
3 Tbsp self-rising flour
1 c flaked coconut
3/4 stick butter or margarine, melted
1 deep dish raw pie shell

Steps:

  • 1. Preheat oven to 350. Stir together the sugar, pineapple, eggs, flour & coconut. Melt butter & add to other ingredients.
  • 2. Pour filling into pie shell. Bake for approx 1 hr or until filling is set & browned.
  • 3. Tip: Before filling raw pie shell, I rub a little egg white or milk onto bottom of pie shell. This will help brown bottom of curst & prevents it from being soggy.

I'm not a fan of ranch dressing, so I used a different dressing instead. The dish still turned out great! The filling was still creamy and flavorful, and the crust was still crispy and golden brown.

I'm a vegetarian, so I used crumbled tofu instead of ground beef. It turned out great! The tofu absorbed all the flavors of the other ingredients, and the dish was hearty and satisfying.

This recipe was a little bland for my taste. I added some extra salt and pepper, and it was much better. I also think it would be good with some shredded cheese on top.
