Twice Baked Potatoes image

This is a simple recipe for a delicious twice baked potato. It's nice to change up your baked potatoes sometime and this is one that everyone will enjoy.

Number Of Ingredients 9

6 medium red potatoes, medium or large
2 Tbsp butter, unsalted
1 c gruyere cheese, swiss or cheddar
1/4 c sour cream
1/4 c milk
2 Tbsp horseradish sauce
6 slice bacon, crumbled
salt and pepper
green onions, chopped

Steps:

  • 1. Preheat the oven to 450 degrees F. Prick the potatoes here and there with a fork and put them into the oven, straight on the wire rack, for 1 to 1 1/2 hours, depending on their size.
  • 2. Remove and scoop out potato leaving a small amount of edge to refill.
  • 3. Mix your potatoes, butter, milk, cheese, sour cream, salt & pepper then add back into the center of the potato skins.
  • 4. Put back in the oven to cook for 20 minutes till hot inside & cheese is melted.
  • 5. Garnish with green onions, bacon and/or herbs.

I'm allergic to cheese, so I made these potatoes without it. They were still really good! I used a vegan cheese substitute and it worked perfectly.

I'm not a huge fan of potatoes, but these twice-baked potatoes were surprisingly good. The filling was flavorful and the potatoes were perfectly cooked. I'll definitely be making them again.
