This is a simple recipe for a delicious twice baked potato. It's nice to change up your baked potatoes sometime and this is one that everyone will enjoy.

Steps:
- 1. Preheat the oven to 450 degrees F. Prick the potatoes here and there with a fork and put them into the oven, straight on the wire rack, for 1 to 1 1/2 hours, depending on their size.
- 2. Remove and scoop out potato leaving a small amount of edge to refill.
- 3. Mix your potatoes, butter, milk, cheese, sour cream, salt & pepper then add back into the center of the potato skins.
- 4. Put back in the oven to cook for 20 minutes till hot inside & cheese is melted.
- 5. Garnish with green onions, bacon and/or herbs.
