Yield 16

Number Of Ingredients 9

1 cube butter
1 cup light brown sugar
1 1/2 cups flour
1 tsp baking powder
1/2 tsp. salt
2 eggs, separated
1 tsp. vanilla
1 cup chopped walnuts
1 cup light brown sugar

Steps:

  • Preheat oven to 350. Toast nutmeats for about 5 minutes or until lightly toasted. Cream butter and sugar until light and fluffy. Add egg yolks and stir in flour, baking powder, salt and vanilla. Press into a well greased 8 inch square baking pan, being sure to keep the batter level. Press nutmeats into the top of the dough. Bake for 15 minutes at 350. Beat egg whites until they form soft peaks. Add sugar and beat until a stiff meringue is formed. Spread carefully over dough, being sure to cover nuts. Bake for an additional 15 to 20 minutes, or until meringue is lightly brown. Let cool and cut into 16 1 inch squares

These Yum Yums were a bit dry for my taste, but I think that's because I overbaked them. I'll try baking them for a shorter time next time.

I'm not a big fan of chocolate, but I actually really liked these Yum Yums. The chocolate flavor was subtle and it paired well with the coconut.
