ASIAN RIB RUB image

Yield 3-4 slabs

Number Of Ingredients 8

2 Tbsp sugar
1 Tbsp kosher salt
1 Tbsp dry mustard
1 tsp chinese five spice powder
3/4 tsp ground black pepper
1/4 tsp cinnamon
1/8 tsp ground cloves
1/2 cup medium-dry sherry

Steps:

  • Combine all dry ingredients in a bowl. Rub on meaty side of ribs. Light one side of a gas grill and put ribs on other side. Keep heat very low. Cover and grill for 30 minutes. Spray the ribs with sherry. Grill 30 minutes more and spray again. Shift ribs around if heat is uneven, but do not turn. Grill 1 1/2 hours to 2 hours total, spraying every 30 minutes. Remove from heat and cut between ribs into 2-rib pieces.
