Time 2h50m

Yield about 4 dozen cookies

Number Of Ingredients 6

2 large egg whites, at room temperature
1/2 teaspoon cream of tartar
2/3 cup superfine granulated sugar
1 teaspoon vanilla extract
1 cup semisweet chocolate chips or finely chopped semisweet chocolate
1 cup finely chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper. Set aside.
  • In the bowl of an electric mixer, beat egg whites until foamy. Add the cream of tartar and beat until fluffy but not at all dry. (Be careful not to over beat.) Add the sugar gradually, about 3 tablespoons at a time. When 1/2 of the sugar has been added, add the vanilla extract. Continue beating and adding remaining sugar in batches, until all of the sugar is dissolved and the meringue is very shiny and tight. Gently fold in the chocolate chips and chopped nuts. Working one teaspoon at a time, push a teaspoonful of meringue from the tip of 1 teaspoon with the back of another teaspoon onto the lined baking sheets, leaving 1-inch of space between cookies. Place baking sheets in the preheated oven and turn the oven off. Leave the cookies (undisturbed) in the oven for at least 2 hours and up to overnight, or until cookies are crisp and dry.

Time 2h

Yield 24 cookies

Number Of Ingredients 12

2 sticks unsalted butter, softened, plus more for greasing glass
1 cup canola or vegetable oil
1 cup granulated sugar, plus more for dipping
1 cup powdered sugar
1 teaspoon vanilla extract
2 large eggs
4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
Blue sanding sugar, for sprinkling (about 1/2 teaspoon per cookie)
Purple sanding sugar, for sprinkling (about 1/2 teaspoon per cookie)

  • Using a cookie scoop, drop balls of dough onto ungreased, unlined baking sheets. Smear a dab of butter all over the bottom of a glass, then dip the glass in granulated sugar. Use the glass to flatten each ball of dough, dipping again into the sugar each time. Then sprinkle blue sanding sugar (about 1/2 teaspoon per cookie) over half of the cookies, and purple sanding sugar over the other half.

Tips:

  • Always use fresh egg whites at room temperature. This will help the meringue to whip up more easily and achieve stiffer peaks.
  • Make sure your mixing bowl and beaters are completely clean and free of any grease. Any residue can prevent the meringue from whipping up properly.
  • Whip the egg whites gradually, starting on low speed and increasing the speed as the meringue begins to thicken. This will help to prevent the meringue from becoming grainy.
  • Once the meringue has reached stiff peaks, stop beating immediately. Over-beating can cause the meringue to become dry and crumbly.
  • Fold in the sugar gradually, a little at a time. This will help to prevent the meringue from deflating.
  • Use a piping bag fitted with a star tip to pipe the meringue onto the baking sheet. This will help to create the signature angel kiss shape.
  • Bake the meringues in a low oven (200°F) for 1-2 hours, or until they are dry and crisp. Do not open the oven door during baking, as this can cause the meringues to collapse.
  • Once the meringues are baked, turn off the oven and leave the meringues in the oven to cool completely. This will help to prevent them from cracking.

Conclusion:

Angel kisses are a classic meringue cookie that is light, airy, and delicate. They are perfect for any occasion, and they are sure to be a hit with everyone who tries them. With a little patience and care, you can easily make these delicious cookies at home.
