Fruit Filling:
5 Granny Smith apples
1 tablespoon lemon juice
7 oz frozen mixed berries
1/2 cup brown sugar
½ teaspoon ground ginger
7 oz marzipan, chopped - or homemade
custard or ice cream to serve
Almond Crumble:
1 3/4 cups unsalted butter, cold and chopped
2 cups all purpose flour
1/4 cup brown sugar
pinch of salt
1/3 cup almonds, chopped
½ teaspoon ground cinnamon
2.5 oz dark chocolate, chips or chunks

Steps:

  • Preheat the oven to 400°F. For the crumble, place the butter and flour in a large bowl and rub together with your fingertips to form coarse crumbs. Using a fork, gently stir in the sugar, salt, almonds, cinnamon and chocolate. Set aside. Peel and roughly chop the apples, then place in an 8-cup capacity ovenproof dish. Toss with lemon juice, then carefully stir in berries, sugar and ginger. Dot with marzipan then top with the crumble. Place the dish on a baking tray and bake for 45 minutes until the topping is golden and the fruit is tender. Stand for five minutes, then spoon into bowls and serve with custard or ice cream.

1 tsp cinnamon
3 tbsp sugar , any kind
½ orange
1 punnet raspberries or blackberries
75g cold butter
50g plain flour
50g oats

Steps:

  • Ask a grown-up to turn the oven on to 200C/180C fan/ gas 6. Peel the apples with a potato peeler, quarter them, cut out the cores, then chop up.
  • Tip the apple into a bowl with the cinnamon and 1 tbsp sugar. Squeeze the juice from the halved orange and add to the bowl, too.
  • Add the berries to the bowl and mix everything together. Tip the fruit mixture into the baking dish and pat it down.
  • Chop three-quarters of the butter into small pieces. Put it in a bowl with the flour. Use your fingers to pinch and rub the butter into the flour.
  • Stir the oats and the rest of the sugar into the flour mixture, then sprinkle it on top of the apple and berries in the baking dish.

50g golden caster sugar
½ tsp mixed spice
2 tbsp plain flour, plus extra for dusting
500g block shortcrust pastry
1 egg, beaten (optional)
clotted cream, custard or ice cream, to serve
50g plain flour
50g ground almonds
70g golden caster sugar
70g cold butter, cut into cubes
30g flaked almonds

Steps:

  • First, make the crumble. Tip the flour, ground almonds, sugar and a pinch of salt into a bowl, then rub in the butter with your fingers until the mix resembles breadcrumbs. Stir in the flaked almonds and chill until needed. Can be prepared up to two days ahead and chilled.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Peel, core quarter and slice the apples, then tip into a bowl with the sugar, mixed spice and flour. Toss well and set aside.
