1 c butter, softened
1 1/4 c dark brown sugar, packed
3 large eggs
2 tsp vanilla extract
2 c flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp cloves or allspice
2 1/4 c quick cooking oatmeal
1 1/2 large granny smith apple, peeled and diced small (eat other 1/2 or use 2 medium)
1 bag(s) cinnamon chips, 10 oz.
1 1/2 c chopped walnuts
glaze or white chocolate for garnish

Steps:

  • 1. Heat oven to 350 degrees. Prepare cookie sheets with parchment paper.
  • 2. In mixer bowl cream butter and brown sugar; about 2 minutes.
  • 3. Beat in egg and vanilla.
  • 4. Sift flour, cinnamon, nutmeg, cloves, baking soda, and salt.
  • 5. Mix flour mixture into creamed mixture just until blended.
  • 6. Add oatmeal, apples, cinnamon chips and walnuts till blended.
  • 7. Scoop dough onto cookie sheets 2 inches apart. Bake for 10-12 minutes until edges are light brown.
  • 8. Let cool a few minutes and remove to cooling rack to cool completely.
  • 9. Drizzle with melted white chocolate or with a powdered sugar glaze. I used melted white chocolate and it was delicious... Enjoy!

1 cup powdered sugar
3 tablespoons Karo light corn syrup
12 ounces vanilla wafers
1 cup almonds, toasted
1/4 cup butterscotch schnapps
1/4 cup apple Schnapps
1/4 cup sugar
1/2 tablespoon cinnamon, for rolling

  • Place nut and wafers into a food processor and process till fine.
  • Add rest of ingredients and process till all well combined.
  • Shape into 1 inch balls pressing to mold them.

4 cups whole wheat flour
1/2 cup cornmeal
1 teaspoon cinnamon
2 eggs
2 tablespoons vegetable oil
1 small apple, grated
1 1/3 cups water

Steps:

  • In a large bowl, combine flour, cornmeal, cinnamon, eggs, and oil.
  • Grate the apple into the mixture; add the water.
