Tips:
- Use fresh ginger. Grated fresh ginger adds a bright, spicy flavor to these cookies that can't be beat. If you don't have fresh ginger on hand, you can use 1 teaspoon of ground ginger, but the flavor will be less intense.
- Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
- Chill the dough before baking. Chilling the dough for at least 30 minutes will help the cookies hold their shape better in the oven.
- Bake the cookies until they are just set. The cookies should be slightly soft in the center when you take them out of the oven. They will continue to firm up as they cool.
- Let the cookies cool completely before frosting them. This will help the frosting set properly.
Conclusion:
These butterscotch gingerbread cookies are a delicious and festive treat that are perfect for the holiday season. They are soft and chewy with a warm and spicy flavor. The butterscotch chips add a touch of sweetness and richness that makes them irresistible. These cookies are sure to be a hit with everyone who tries them!
