CARAMELIZED PEARS
After picking an abundant crop of pears, I was looking for new ways to enjoy them. A friend suggested warming them with butter and brown sugar. This tasty recipe was the result! We like them with vanilla bean ice cream, but plain vanilla or cinnamon are also quite delicious! -Sue Gronholz, Beaver Dam, Wisconsin

Steps:
- For spiced chiffon muffins:
- Preheat oven to 350°F. Lightly butter and flour 9 standard (1/3-cup) muffin cups. Sift flour and next 5 ingredients twice into medium bowl. Mix 6 tablespoons lukewarm water with vanilla in small bowl. Using electric mixer, beat brown sugar and butter in large bowl until light and fluffy. Add flour mixture in 3 additions alternately with water mixture in 2 additions, beating batter until blended after each addition.
- Using electric mixer fitted with clean dry beaters, beat egg whites in medium bowl until soft peaks form. Gradually add 2 tablespoons sugar and beat until firm glossy peaks form. Fold 1/3 of whites into batter to lighten, then fold in remaining whites. Spoon 1/4 cup batter into each prepared muffin cup.
- Bake muffins until tester inserted into center comes out clean, about 17 minutes. Cool muffins in pan on rack at least 20 minutes. Remove muffins from pan and cool completely on rack. DO AHEAD: Can be made 1 day ahead. Return muffins to muffin pan; cover and store at room temperature.
- For caramelized winter fruit:
- Melt butter in large nonstick skillet over medium heat. Sprinkle sugar over butter in skillet, then place apple slices and pear slices in single layer (if possible) atop sugar. Increase heat to medium-high and cook without stirring until fruit is golden on bottom, pressing out to single layer as fruit cooks and reduces in volume, about 8 minutes. Turn fruit over in skillet and cook until golden, about 5 minutes. Add cranberries and cook until juices in skillet are reduced by about half, about 2 minutes.
- For custard:
- Heat half and half in heavy large saucepan over medium heat just until heated through and bubbles form at edge of pan. Whisk sugar, egg yolks, and sea salt in medium bowl; whisk in cornstarch.
- Gradually add hot half and half to yolk mixture and whisk until blended. Return custard to same saucepan; stir over medium heat until custard boils and thickens, 2 to 3 minutes. Whisk in butter, then 2 tablespoons brandy. Remove from heat.
- Brush top of muffins several times with remaining 4 tablespoons brandy until absorbed. Place 1 muffin in each of 8 bowls, cups, or dessert glasses. Divide caramelized fruit among bowls. Spoon warm custard over muffins and fruit in bowls (about 1/3 cup for each). Chill at least 30 minutes. DO AHEAD: Can be made 2 hours ahead. Cover and keep chilled. Let stand at room temperature 20 minutes before serving.

Steps:
- Fill a large bowl with water and squeeze a lemon into it. Peel each pear, leaving a small crown of skin around the stem. Carefully core each, keeping pear intact. As the pears are peeled, place in the water.
- Preheat oven to 450 degrees.
- In large nonreactive ovenproof skillet, combine sugar, vinegar and 1/2 cup of water. Cook, without stirring, over medium heat until mixture is lightly caramelized. Remove from heat.
- While caramel is cooking, remove pears from water, draining them well. When caramel is done, roll pears in caramel, turning them with 2 wooden spoons. Do not touch caramel. Stand pears up in the pan, place pan in oven, and roast pears about 45 minutes, basting them frequently with caramel in the pan, until they are tender and golden brown. Keep the basting spoon in a dish of warm water to prevent it from getting sticky.
- Using wooden spoons, carefully transfer pears to a rack placed over a sheet of foil, and allow them to drain. Return skillet to top of stove, whisk in the cream and bring to a simmer. Set aside until ready to serve.
- Serve pears with warm sauce and vanilla ice cream or frozen yogurt on the side.

Caramelizing Pears:
1. Use ripe pears: Ripened pears caramelizes beautifully and have a rich, sweet, and complex taste. 2. Peel and core the pears and cut them evenly: This ensures uniform cooking and a visually appealing result. 3. Use a heavy-bottomed pan: A pan with a heavy base helps distribute heat evenly, which prevents the pears from scorching. 4. Start with a little bit of butter and sugar: The sugar and butter will caramelizes and create a delicious golden-amber syrup. 5. Swirl the pan frequently and cook until the pears are golden brown and caramelizes: Keep the pears moving in the pan to prevent them from sticking and ensure even cooking. 6. Add a little bit of liquid to the pan: Adding a small amount of liquid, like white wine, apple cider, or orange liqueur, helps to prevent the pears from becoming overly dry and hard.Custard:
1. Use fresh, cold milk: Using cold milk helps prevent the eggs from cooking too quickly and becoming scrambled. 2. Temper the eggs: Whisking the eggs with a small amount of the hot milk mixture helps to warm up the eggs and prevent them from curdling when they are added to the pan. 3. Strain the mixture: Straining the mixture removes any air bubbles, resulting in a smooth and creamy texture. 4. Bake the mixture in a water bath: Baking the mixture in a water bath helps to create a gentle, evenly distributed heat, preventing the top from browning too quickly and the center from being undercooked. Conclusion:
Caramelizing brings out a rich, flavorful sweetness that perfectly complements the creamy, smooth texture of the pears and the rich, vanilla-flavored of the pastry cream. This combination is sure to be a hit with family and friends. With some careful attention to the pears and the pastry cream, you can make a classic dessert that is both delicious and visually appealing. These tips and techniques will help you make the perfect Caramelizing Pears Custard every time.
