ORANGE & CARROT MUFFINS

Yield 12 to 18 Muffins

Number Of Ingredients 13

1 Cup Buttermilk
1 Cup Quick Cooking Oats
1 Beaten Egg
1/3 C Melted Butter
1 Teaspoon Vanilla
2 Tablespoons Orange Juice (or 1 Tsp Orange Extract)
1 C Whole Wheat Flour
1 Teaspoon Baking Soda
2 Teaspoons Baking Powder
1 Teaspoon Salt
1/2 C Brown Sugar
1 Cup Finely Grated Carrot
Grated rind of 1 Orange

Steps:

  • Preheat oven to 375 and grease a muffin tin. Pour the buttermilk over the oats. Combine all the remaining dry ingredients, then combine all the remaining wet ingredients. Mix until just combined: batter will be lumpy. Fill tins 2/3 full and bake for 18-22 minutes until golden brown. Batter can also be divided evenly between all 12 tins to make 12 larger muffins.

Tips:

  • Prep your ingredients: For best results, measure and prep all your ingredients before you start mixing. This will help ensure that your muffins turn out evenly cooked and moist.
  • Don't overmix the batter: Overmixing can result in tough muffins. Mix the batter just until the ingredients are combined. A few lumps are perfectly fine.
  • Fill muffin cups properly: Fill each muffin cup about 2/3 full. This will allow the muffins to rise properly without overflowing.
  • Bake muffins at the right temperature: The ideal baking temperature for carrot orange muffins is 350°F (175°C). This temperature will help ensure that the muffins cook through evenly without burning.
  • Don't overbake the muffins: Overbaking can result in dry, crumbly muffins. Bake the muffins for the time specified in the recipe, or until a toothpick inserted into the center comes out clean.
  • Let muffins cool before frosting: If you're planning on frosting your muffins, let them cool completely before you do so. This will help prevent the frosting from melting.

Conclusion:

Carrot orange muffins are a delicious and nutritious snack or breakfast treat. They're easy to make and can be customized to your liking. With a few simple tips, you can create perfect carrot orange muffins every time. So next time you're looking for a sweet and satisfying treat, give this recipe a try!
