4 cups basmati rice
1 teaspoon coarse salt
3 tablespoons unsalted butter
1 tablespoon plain yogurt
2 teaspoons saffron water
32 ounces whole sour cherry preserves, drained, liquid reserved
2 tablespoons extra-virgin olive oil

Steps:

  • Place rice in a medium bowl, and add enough water to cover. Pour off water, and repeat process 2 to 3 more times. Add enough cold water to cover. Add salt, and let stand for 10 to 15 minutes. Drain.
  • Bring a large pot of water to a boil. Add rice, and cook until almost tender, 5 minutes. Drain.
  • Meanwhile, in a medium nonstick stockpot, combine 2 tablespoons water, butter, yogurt, and 1 teaspoon saffron water. Add rice, layering with the cherries, and cherry liquid. Sprinkle with remaining saffron water and the oil. Cover top of stockpot with a thick kitchen towel, and place lid on top. Cook over medium heat for 5 minutes. Reduce heat to low, and cook for 30 minutes more. Invert rice onto a large platter. Serve immediately.

3 cups cooked long grain rice
1/2 cup chopped pecans
1 package (8 ounces) cream cheese, softened, divided
1 can (21 ounces) cherry or strawberry pie filling
1 cup confectioners' sugar
1 carton (12 ounces) frozen whipped topping, thawed, divided
1-1/2 cups cold milk
1/2 teaspoon coconut extract
1 package (3.4 ounces) instant vanilla pudding mix
1 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, combine the rice, pecans and a third of the cream cheese. Spread into a greased 13x9-in. dish. Refrigerate for 30 minutes; spread with pie filling. Refrigerate for 15 minutes. , In a bowl, combine confectioners' sugar and remaining cream cheese. Fold in half of whipped topping; spread over pie filling. 3 1/2 cups good chicken stock
1 cup wild rice, thoroughly rinsed
Kosher salt and freshly cracked black pepper
1 cup roughly chopped dried cherries
1/2 cup toasted and roughly chopped pecans
1/4 cup chopped flat-leaf parsley

Steps:

  • In a large saucepan, add the stock, wild rice and salt and pepper, to taste. Bring to a boil over medium heat. Reduce the heat and simmer for 15 minutes. Cover and simmer, stirring occasionally, until the rice is tender and is beginning to split, about 30 to 40 minutes. Drain of any excess liquid and fold in the cherries, nuts and parsley. Taste for seasoning and adjust if necessary. Transfer the rice to a serving bowl and serve.

Steps:

½ teaspoon lemon juice

7 tablespoons plus 3/4 cup sugar
3/4 cup short-grain or medium-grain rice
1 vanilla bean, split lengthwise
1/2 cup sliced almonds, toasted
1 cup chilled whipping cream
1 16-ounce package frozen pitted cherries, thawed
1 lemon, quartered
1 tablespoon cornstarch mixed with 1 tablespoon water

Steps:

  • Combine milk, 5 tablespoons sugar and rice in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean and bring to boil. Reduce heat to medium and simmer until rice is tender and mixture is thick, stirring frequently, about 35 minutes. Discard vanilla bean. Mix in almonds. Pour rice pudding into 13x9x2-inch metal baking pan; cool completely.
  • Using electric mixer, beat cream and 2 tablespoons sugar in medium bowl until medium peaks form. Fold cream into rice pudding mixture in pan. Cover and refrigerate until cold, about 4 hours. (Can be made 1 day ahead. Keep refrigerated.)
  • Cook cherries, lemon and remaining 3/4 cup sugar in heavy medium saucepan over medium heat until cherries are tender, stirring occasionally, about 5 minutes. Add cornstarch mixture and bring to boil, stirring constantly. Discard lemon. Spoon pudding into bowls. Spoon hot cherry sauce over.
