AMY'S CHEWY COCONUT BARS (DIABETIC)

Amy's Chewy Coconut Bars (Diabetic) image

I was looking for a good bar cookie to add to my cookie tray that was suitable for Redneck Epicurean who was diabetic. We were partners in a holiday cookie swap and I was in awe of her cheerfulness even when she was in tremendous pain. She loved them and in her honor I am renaming this bar for her. Combining coconuts and walnuts with a faint hint of maple really appealed to me so I decided to give it a try as well as posting here for others as well as for future reference. According to the source this bar has 126 cal., 2 g pro., 10 g carbo., 9 g fat, 27 mg chol., 141 mg sodium.

Tips:

  • Use fresh shredded coconut. Fresh shredded coconut is more flavorful and moist than dried coconut. You can find fresh shredded coconut in the refrigerated section of most grocery stores.
  • Toast the macadamia nuts. Toasting the macadamia nuts will enhance their flavor and make them more crunchy. To toast the nuts, spread them out on a baking sheet and bake them at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown.
  • Use a combination of brown sugar and granulated sugar. Brown sugar will add a molasses flavor to the bars, while granulated sugar will add sweetness. You can adjust the ratio of brown sugar to granulated sugar to taste.
  • Don't overcook the bars. The bars should be slightly golden brown on top and set in the center. If you overcook them, they will be dry and crumbly.
  • Let the bars cool completely before cutting them. This will help prevent them from falling apart.

Conclusion:

Chewy coconut macadamia bars are a delicious and easy-to-make treat. They are perfect for parties, potlucks, or a simple snack. With their chewy texture, sweet coconut flavor, and crunchy macadamia nuts, these bars are sure to be a hit with everyone who tries them.
