Tips:

  • For the best results, use fresh cornmeal. If you don't have any on hand, you can make your own by grinding dried corn kernels in a food processor or blender.
  • Be sure to measure your ingredients correctly. Too much or too little of any one ingredient can throw off the balance of the cookies.
  • Don't overmix the dough. Overmixing can make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape.
  • Bake the cookies until they are golden brown around the edges. Overbaking can make them dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them keep their shape and prevent them from becoming too soft.

Conclusion:

Cornmeal currant crunch cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their sweet and slightly tart flavor, these cookies are sure to be a hit with everyone who tries them.
