1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
1 large egg
1 tablespoon grated orange zest
1-1/2 teaspoons orange extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
2 cups old-fashioned oats
1 cup dried cranberries
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, orange zest and extract. , Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well. Stir in the oats, cranberries and coconut. Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. , Bake at 375° for 11-13 minutes or until bottoms are browned. Remove to wire racks. Store in airtight container.

1 cup Crisco (If you buy the sticks it is one stick) + 2tbs of water
1 1/3 cup brown sugar, packed
2 eggs
1 teaspoon vanilla extract
1.5 cup bread flour (can use all-purpose flour it will less chewy this way)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
3 cups rolled oats
1 cup chopped pecans
2 tbs orange zest (probably 1-2 oranges worth)
1/3 cup of orange juice (can use the fresh from the oranges you zested OR just use from a bottle)
1.5 cups of craisins or any brand dried cranberry

  • Preheat oven to 350°F (175°C) In a large bowl, cream together the Crisco, water, brown sugar, egg, orange zest, orange juice and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Mix the dry into the wet ingredients until well combined. Then stir in the nuts and dried fruit. Bake for 10-12 minutes and cool on a wire rack
