CREAMY GREEN BEAN SALAD
IN our early years of marriage, my husband asked me to make bean salad "like his mother's". I've tried many versions, but this is the one our whole family likes best. In the past, I'd can about 50 quarts of green beans every year, but now my husband suggests I can only enough to keep making this salad. -Lorraine Mix, Remer, Minnesota

Steps:
- In a saucepan over high heat in 1 inch of water, heat green beans to boiling.
- Reduce heat to low, cover and simmer 5-10 minutes or until green beans are tender crisp; drain.
- In a bowl combine the mayonnaise, tarragon vinegar, salt, mustard and pepper; mix well.
- I like to put the green beans and sliced onions in a large zip-lock bag (less clean up) along with the tarragon dressing mixture, fumbling for dressing to coat green beans.
- If you don't have a large zip-lock bag you can place the green beans and sliced onions in a large dish and toss to coat with the tarragon dressing.
- Cover and refrigerate 2 to 3 hours hours for flavors to blend before serving.
- Garnish with freshly topped tarragon.
- Serve and Enjoy!

FRESH BEAN AND TOMATO SALAD WITH CREAMY CAESAR VINAIGRETTE
Steps:
- For the vinaigrette: In a skillet over medium-low heat, toast the pine nuts, stirring occasionally, until golden and fragrant, 4 to 5 minutes. Remove from the heat and set aside. (Alternatively, place the pine nuts on a baking sheet and toast in a 350-degree oven until golden, 6 to 8 minutes.)
- In a blender, combine the mayonnaise, pecorino, toasted pine nuts, lemon juice, Dijon, anchovies, Worcestershire, cayenne and a pinch of salt and pepper. Blend until smooth. Set aside.
- For the salad: Bring a large pot of salted water to a boil. Blanch the beans until crisp-tender, 5 to 7 minutes. With a slotted spoon, remove the beans to a serving plate and add the sliced tomatoes and torn basil. Drizzle with the vinaigrette, and sprinkle with some pine nuts and the 2 tablespoons pecorino. Season with salt and pepper.
SUMMER BEAN SALAD WITH CREAMY LEMON DRESSING
This recipe is from Eat This Book by Tyler Florence. Tyler came up with this recipe while strolling through the Union Square Greenmarket in New York City and he came across some really cool summer beans -- yellow wax beans and haricots verts. He put together a simple vinaigrette of lemon juice, mustard, and creme fraiche.

Steps:
- 1. Whisk first 4 ingredients in a small bowl. Season with salt and pepper.
- 2. Toss greens in a large bowl with enough dressing to coat. Divide greens among plates.
- 3. Toss beans, red peppers and onion in a medium bowl with enough dressing to coat. Top greens with bean mixture, then tuna, dividing equally. Garnish with olives.
Tips:
- Use fresh beans: Fresh beans have a better flavor and texture than canned beans. If you're using canned beans, rinse them well before using.
- Cook the beans properly: Beans should be cooked until they are tender but still hold their shape. Overcooked beans will be mushy.
- Use a variety of beans: Don't be afraid to mix and match different types of beans in your salad. This will add flavor and texture.
- Add vegetables and herbs: Vegetables and herbs will add flavor and color to your salad. Some good options include diced celery, chopped onion, chopped red bell pepper, and chopped fresh parsley.
- Use a flavorful dressing: The dressing is what will bring all the flavors of your salad together. A simple vinaigrette is a good option, but you can also use a creamy dressing or a tangy dressing.
- Chill the salad before serving: Chilling the salad will help the flavors to meld and will make it more refreshing.
Conclusion:
Creamy bean salad is a delicious and easy-to-make salad that is perfect for summer gatherings. It is also a healthy and affordable option that can be made with a variety of ingredients. So next time you're looking for a light and refreshing salad, give creamy bean salad a try.
