Aunt Evelyn's Easy Creamy Banana Pudding (Low-Sugar Low-Fat) image

My late Aunt Evelyn, who was diabetic for many years, was a creative cook who shared this recipe with my mother, who shared it with me. This is a proven hit for potlucks, barbecues, and church suppers, and no one would guess it was a low-sugar and low fat recipe.

Categories     Dessert

Time 15m

Yield 12 serving(s)

Number Of Ingredients 6

2 packages jello-o fat-free sugar-free instant vanilla pudding mix
4 cups skim milk
1 (8 ounce) container reduced fat or 1 (8 ounce) container nonfat sour cream
1 (8 ounce) container cool whip sugar-free whipped topping, thawed
4 -5 firm but ripe bananas
11 ounces box nilla reduced-fat vanilla wafers

Steps:

  • Combine pudding mix and milk in large bowl. Beat or whisk for 2 minutes until thickened. Refrigerate for 5 minutes. Fold sour cream and whipped topping into pudding and set aside. Crumble 6 vanilla wafers into coarse crumbs by hand and set aside for garnish. In a 9x13 dish or deep round bowl, layer vanilla wafers, sliced bananas, and pudding mixture until layers run out (about 4 layers), ending with pudding mixture. Sprinkle top with reserved vanilla wafer crumbs. Cover and refrigerate about 4 to 6 hours to allow vanilla wafers to soften.

SUPER EASY LITE BANANA PUDDING

Super Easy Lite Banana Pudding image

This is my traditional way of fixing banana pudding. When ever I take this some where I never bring home any leftovers, so I split it into two casseroles. This will make a 9x13 or 2 smaller casseroles.

Provided by MsSally

Categories     Dessert

Time 10m

Yield 6-8 serving(s)

Number Of Ingredients 5

1 (16 ounce) box reduced-fat vanilla wafers (you might not use whole box, save some for topping)
1 (6 ounce) box fat-free sugar-free instant vanilla pudding mix
3 cups skim milk (cold)
8 ounces Cool Whip Free (thawed)
3 -4 bananas

Steps:

  • In whatever size dish you use. Put a single layer of vanilla wafers in bottom, and set aside.
  • In large bowl, mix pudding mix and milk according to directions on box. Let sit for 5 minutes till set.
  • Fold cool whip into pudding.
  • Slice bananas into 1/4 inch slices and layer over wafers. Spoon pudding mixture over bananas.
  • Top as desired. I usually lay a layer of vanilla wafers around outside of dish, but you can also crush some wafers and sprinkle over the top, or top with additional bananas and cool whip. But if you use bananas for garnish, toss with lemon juice first to avoid browning.

EASY YUMMY BANANA CREAM PUDDING

Easy Yummy Banana Cream Pudding image

Made with cooked pudding this is a little more labor intensive but still very easy and very yummy. Make the pudding one evening and put the pudding together the next day so it has some time in the refrigerator to soften the cookies and mellow the flavors. I brought a recipe of this to a BBQ a couple of weeks ago. There were only ten people there but I honestly think I could have made three recipes of this and not had anything leftover. UPDATE: I made this for my MIL's Memorial and it was a hit. It gave a sweet touch to a sad day.

Categories     Dessert

Time 40m

Yield 1 pudding, 8-10 serving(s)

1 (14 ounce) can sweetened condensed milk
1 1/2 cups cold water
4 ounces vanilla pudding mix (not instant)
12 ounces Cool Whip
3 bananas, sliced
14 ounces vanilla wafers (Zaar insisted on a size and I guessed since I don't have a box of Nilla's around)

Steps:

  • Cook the condensed milk, water and pudding mix whisking all the time until it boils hard, remove from heat, lay plastic wrap on top to prevent skin and chill.
  • Fold the cool whip into the pudding.
  • In glass bowl layer the bottom with cookies top side facing out.
  • Layer bananas on top of the cookies.
  • Layer pudding mix on top of bananas.
  • Stick a layer of cookies up on edge, tops facing out, in a ring around your bowl so it looks pretty through the glass.
  • Repeat the layers ending with a layer of pudding and then topped with a layer of cookies. Be gentle and take your time with the layers to keep everything neat.
  • (You should use up all the cookies and banana slices except for the few you just had to eat.).

EASY BANANA PUDDING

Easy Banana Pudding image

My family & friends enjoy this easy pudding & requests it frequently. A friend made this for us at work one night & shared her recipe.

Provided by Juanita Karnes

Categories     Puddings

Number Of Ingredients 6

3 box banana cream instant pudding
1 pt heavy whipping cream
6 c milk, 2%,
1 tsp vanilla extract
1 box vanilla wafers cookies
5-6 large bananas

Steps:

  • 1. With electric mixer, whip heavy cream until soft peaks form. Set aside.
  • 2. In a large mixing bowl, whisk together the pudding, milk, & vanilla until it is thick. Fold in the whipped cream.
  • 3. In a large bowl, add a thin layer of the pudding, then a layer of waffers. Slice bananas & layer on top of waffers. Add a layer of pudding. Repeat process until all ingredients are used, ending the top with a layer of pudding. You can then decorate the top with whole wafers or crumble several & sprinle on top. You can also top with whipped cream then add the waffers/crumbs. Cover & place in refrigerator until completely chilled.

Tips:

  • Use ripe bananas for the most intense flavor and sweetness. Overripe bananas will work best.
  • If you don't have vanilla wafers, you can use another type of cookie, such as Nilla wafers orgraham crackers.
  • You can add other ingredients to the pudding, such as chocolate chips, nuts, or fruit.
  • If you want a more decadent pudding, you can use heavy cream instead of milk.
  • To make a gluten-free version of the pudding, use gluten-free vanilla wafers or another type of gluten-free cookie.
  • You can make the pudding ahead of time and store it in the refrigerator for up to 3 days.

Conclusion:

Banana pudding is a classic Southern dessert that is loved by people of all ages. It is easy to make and can be customized to your own liking. With its creamy, sweet, and flavorful layers, banana pudding is a perfect treat for any occasion.
