Time 25m

Yield 2

Number Of Ingredients 6

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Crack the eggs into a bowl, being careful to keep the yolks intact.

Steps:

  • Next time you make an egg-in-a-hole, consider using avocado instead of bread: Cut an avocado in half, remove the pit and scoop out about 1 tablespoon of flesh from each half. Season with salt and pepper and nestle the halves cut-side up in a small pile of salt on a baking sheet so they won't wobble. Crack a medium egg into each (a large egg will overflow). Season with salt and bake at 425 degrees F until the white is just set, 16 to 18 minutes; top with pico de gallo and crushed tortilla chips.

SOFT SCRAMBLED EGGS WITH AVOCADO

Soft Scrambled Eggs With Avocado image

Provided by Tyler Florence

Categories     main-dish

Time 15m

Yield 6 servings

Number Of Ingredients 6

12 eggs
1/4 cup heavy cream
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper
3 avocados, peeled, pitted and sliced
Chopped fresh chives, for garnish

Steps:

  • Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

EGGS AVOCADO

Eggs Avocado image

Fun to share with guests for breakfast, friends after the show, or anytime! Friendly, filling fare at any hour. Great with parmesan french bread. I like to add cream cheese and diced tomato to mine. A Betty Crocker recipe (1971)

Provided by SmHerndon

Categories     Breakfast

Time 15m

Yield 6 serving(s)

Number Of Ingredients 9

8 eggs
1/2 cup light cream
1 teaspoon salt
1/2 teaspoon pepper
1 avocado, peeled and cubed (about 1 Cup)
2 tablespoons butter
12 slices bacon, crispy fried & crumbled
cream cheese, thinly cubed (optional)
tomatoes (optional)

Steps:

  • Mix eggs, cream, salt & pepper with a fork; stir in avocado.
  • Heat butter in skillet over medium heat until just hot enough to sizzle a drop of water;.
  • Pour mixture into skillet. I personally like to add cream cheese at this time. As egg mixture begins to set at bottom and side, lift cooked portion with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook until eggs are thickened throughout but still moist.
  • Sprinkle tomato if desired.
  • Remove from heat and sprinkle bacon on servings.

Tips:

  • Choose ripe avocados. Avocados should be firm but slightly soft to the touch. Avoid avocados that are too hard or too soft.
  • Use fresh eggs. Fresh eggs will give you the best results. If you don't have fresh eggs, you can use store-bought eggs, but they may not be as flavorful.
  • Add your favorite toppings. You can add a variety of toppings to your egg in avocado, such as cheese, bacon, salsa, or guacamole. Get creative and experiment with different flavors.
  • Enjoy immediately. Egg in avocado is best enjoyed immediately after it is made. The avocado will start to brown after a few minutes, so it's best to eat it right away.

Conclusion:

Egg in avocado is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to get your daily dose of protein, vitamins, and minerals. With so many different variations, there's an egg in avocado recipe out there for everyone. So next time you're looking for a quick and easy meal, give egg in avocado a try. You won't be disappointed.
