Yield Makes 4 Servings

Number Of Ingredients 8

2 tablespoons olive oil (preferably extra-virgin)
2 tablespoons frozen cranberry juice concentrate, thawed
1 tablespoon white wine vinegar
3 heads Belgian endive, thinly sliced crosswise
2 Red Delicious or Fuji apples, unpeeled, cored, chopped
1/2 cup chopped fresh cranberries
1/4 cup thinly sliced green onions
1/4 cup walnuts, toasted, coarsely chopped

Steps:

  • Whisk oil, cranberry juice concentrate and vinegar in small bowl to blend. Season to taste with salt and pepper.
  • Combine endive and apples in medium bowl. Pour dressing over; toss to coat. Sprinkle cranberries, green onions and walnuts over and serve.

Tips:

  • Use a variety of apples. This will give your salad a more complex flavor and texture. Some good choices include Granny Smith, Honeycrisp, and Braeburn apples.
  • Don't overcook the cranberries. They should be cooked until they are just beginning to soften, but not so much that they lose their shape.
  • Add nuts or seeds for a crunchy texture. Walnuts, pecans, and sunflower seeds are all good choices.
  • Use a light dressing. A simple vinaigrette or yogurt dressing is a good option. You don't want to overpower the flavors of the apples and cranberries.
  • Serve the salad chilled. This will help the flavors to meld together.

Conclusion:

Apple cranberry salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and festive salad, give this recipe a try.
