Ham and Vegetable Linguine image

I've been pleasing dinner guests with this delicious pasta dish that was based on one I found in a favorite Italian cookbook. HAM AND VEGETABLE PASTA

Ham and Vegetable Pasta image

This recipe started with the question of what to do with leftover ham. It's an adapted recipe from Taste of Home. Although very rich, we loved the mix of fresh vegetables with the ham in a cream-based sauce. I'm going to try the recipe again, lightening the sauce by using half and half with chicken broth to replace the cream.

Provided by quikgourmet

Categories     < 30 Mins

Time 30m

Yield 5 serving(s)

Number Of Ingredients 16

3/4 lb linguine or 3/4 lb angel hair pasta
1/2 lb fresh asparagus, cut into 1-inch pieces
1/2 lb fresh mushrooms, sliced
1 medium carrot, thinly sliced
1 medium zucchini, diced
2 cups julienned cooked ham
1/4 cup butter
1 pint heavy cream
1/2 cup frozen peas
3 green onions, sliced
1/2 cup grated parmesan cheese
1 teaspoon dried basil
3/4 teaspoon salt
1/4 teaspoon pepper
1 dash ground nutmeg
additional parmesan cheese (optional)

Steps:

  • Prepare all vegetables and ham for cooking.
  • Cook pasta according to package directions.
  • Meanwhile, in a large skillet, saute asparagus, mushrooms, carrot, zucchini, and ham in butter until the vegetables are tender.
  • Add cream, peas, onions, Parmesan, basil, salt, pepper, and nutmeg; bring to a boil.
  • Reduce heat; simmer for 3 minutes, stirring frequently.
  • Rinse and drain pasta; add to vegetable mixture and toss to coat.
  • Sprinkle with additional Parmesan cheese, if desired.

Tips:

  • Choose the right pasta: Linguine is a great choice for this recipe because it holds the sauce well and cooks evenly. However, you can use any type of pasta that you like.
  • Use fresh vegetables: Fresh vegetables will give your dish the best flavor and texture. If you don't have fresh vegetables on hand, you can use frozen or canned vegetables in a pinch.
  • Cook the vegetables properly: The vegetables should be cooked until they are tender but still have a little bit of crunch. Overcooked vegetables will be mushy and bland.
  • Don't overcrowd the pan: When you're cooking the vegetables, don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam instead of sauté.
  • Use a good quality ham: The ham is one of the main ingredients in this dish, so it's important to use a good quality ham. Look for a ham that is smoked and fully cooked.
  • Make the sauce ahead of time: The sauce for this dish can be made ahead of time and stored in the refrigerator for up to 3 days. This will save you time when you're ready to cook the pasta.

Conclusion:

This ham and vegetable linguine is a delicious and easy-to-make dish that is perfect for a busy weeknight meal. The combination of ham, vegetables, and creamy sauce is sure to please everyone at the table. So next time you're looking for a quick and easy pasta dish, give this ham and vegetable linguine a try. You won't be disappointed!
