RUSSIAN BEET SALAD WITH HERRING
This salad is commonly known in Russia as a 'Herring under the Winter Coat Salad.' It is a must for every Russian holiday, however, you have to have a taste for herring and beets. Every Russian craves this salad, but my American hubby doesn't care for it. I use a clear bowl for this salad so that you could see all ingredients in it.

Steps:
- Bring a large pot of water to a boil. Cook the potatoes, carrots, and beets in the boiling water until cooked but still firm, 15 to 20 minutes for the potatoes, 25 to 30 minutes for the carrots, and 40 minutes for the beets. Allow each to cool to the touch before further handling. Remove and discard the skins from the potatoes and beets. Shred the potatoes, carrots, and beets, keeping them separate.
- Arrange about half the onion and half the herring fillets in a layer in the bottom of a bowl. Cover the layer with about half of the grated potatoes, then a layer of about half the carrot, and finally about half the beet. Spread about 3 tablespoons of mayonnaise over the salad; season with salt and pepper. Repeat the layers in the same order to finish building the salad. Cover with plastic wrap and chill in the refrigerator at least 1 hour. Serve cold.

HERINGSTOPF MIT SAURER SAHNE (HERRING SALAD WITH SOUR CREAM)
I grew up in North-Rhine Westphalia, in Germany, where this is eaten quite regularly. I adopted this recipe from Recipezaar as it didn't have a home and I thought it'd be nice to actually make this recipe, also known as Herringsstip, as I usually just buy it ready made. I'll update once I've made it, but if you make it before me, please let me know what you think!

HERRING, BEETS AND POTATO SALAD
Steps:
- - Soak fillet in cold water covered in the fridge (6-8 hrs) - Rinse well, pat dry and cut into 1/2 inch cubes - Place in a large bowl and combine with potatoes, beets, onion, apple, pickles, chopped egg, and meats - In a small bowl whisk the dressing - Combine and serve
Tips:
- Use fresh, high-quality ingredients: The quality of your ingredients will greatly impact the taste of your herring salad. Use fresh, herring, vegetables, and herbs for the best results.
- Don't overcook the potatoes: Overcooked potatoes will become mushy and ruin the texture of your salad. Cook them until they are tender but still firm.
- Use a light hand with the mayonnaise: Too much mayonnaise can overpower the other flavors in your salad. Use just enough to bind the ingredients together.
- Season to taste: Be sure to taste your salad before serving and adjust the seasoning as needed. You may need to add more salt, pepper, or lemon juice to taste.
- Serve immediately: Herring salad is best served immediately after it is made. The flavors will meld together better and the salad will be more refreshing.
Conclusion:
Herring salad is a delicious and versatile dish that can be enjoyed as a main course or side dish. It is also a great way to use up leftover herring. With its simple ingredients and easy preparation, herring salad is a great option for any occasion.
