HOMEMADE KETCHUP
This ketchup does come close to those name brands in terms of taste, texture and color. I've never had a tomato paste-based ketchup that I liked, so I decided to cook down crushed tomatoes instead. By using the slow cooker, we take most of the labor out of the process.

Steps:
- Stir all the ingredients together in a big saucepan and bring to a boil over medium-high heat.
- Reduce the heat and simmer until the mixture has reduced by about half, 10-20 minutes.
- Let cool before serving.
- Refrigerate in an airtight container for up to five days or freeze in ¼-cup amounts in zipper-lock snack bags for up to three months.
Tips:
- Choose the right tomatoes: Vine-ripened tomatoes are the best choice for making ketchup, as they have a richer flavor than other types of tomatoes. If you can't find vine-ripened tomatoes, use Roma tomatoes instead.
- Roast the tomatoes before making the ketchup: Roasting the tomatoes intensifies their flavor and makes them easier to blend. You can roast the tomatoes in the oven or on a grill.
- Use a food mill to remove the seeds and skins from the tomatoes: A food mill is the easiest way to remove the seeds and skins from the tomatoes. If you don't have a food mill, you can also use a strainer or a blender.
- Add carrot to the ketchup: Carrot adds a natural sweetness and a vibrant color to the ketchup. You can use fresh or frozen carrots.
- Use apple cider vinegar instead of white vinegar: Apple cider vinegar has a more complex flavor than white vinegar, which makes it a better choice for ketchup.
- Season the ketchup to taste: Add salt, pepper, garlic powder, and onion powder to taste. You can also add other spices, such as cayenne pepper or paprika.
Conclusion:
Homemade ketchup is a delicious and versatile condiment that can be used on a variety of foods. It's easy to make and can be tailored to your own taste. So next time you're looking for a ketchup, skip the store-bought stuff and make your own instead. You won't be disappointed!
