Time 25m

Yield 4 to 6 servings

Number Of Ingredients 11

4 tablespoons unsalted butter, at room temperature
3 tablespoons fresh herbs (chives, parsley, rosemary, thyme, cilantro, etc.)
4 pitas (I like to use whole wheat for a nuttier flavor), cut into eighths
Salt, for sprinkling
Two 15-ounce cans chickpeas, drained and juice reserved
2 cloves garlic
1/4 cup lemon juice
1/4 cup tahini
1 teaspoon ground cumin
1/2 cup extra-virgin olive oil
1 teaspoon salt

Steps:

  • For the pita crisps: Preheat the oven to 400 degrees F. In a food processor, combine the butter and herbs and pulse until well combined. Spread the herb butter onto the pita slices. Sprinkle with salt and bake until crisp, about 10 minutes.
  • Meanwhile, for the hummus: In a food processor, combine the drained chickpeas, garlic, lemon juice, tahini and cumin. Pulse until smooth. With the food processor running, add the olive oil in a steady stream. Season with the salt and puree until very smooth. If the mixture is too thick, add 2 tablespoons at a time of the reserved chickpea juice until desired consistency.

Yield 4 servings

Number Of Ingredients 10

2 garlic cloves, divided
1 (15.5-oz.) can chickpeas, rinsed
2 Tbsp. plus 1/3 cup extra-virgin olive oil
Kosher salt
3 (8"-diameter) pitas, split in half, torn into 1" pieces
2 cups plain whole-milk yogurt (not Greek)
2 tsp. fresh lemon juice
6 Tbsp. unsalted butter
1/2 cup chopped cashews
Sumac (for serving; optional)

Steps:

  • Preheat oven to 350°F. Smash 1 garlic clove with the side of a chef's knife and combine in a medium saucepan with chickpeas and 2 Tbsp. oil. Pour in cold water to cover chickpeas. Season with salt and bring just barely to a simmer. As soon as you see bubbles, remove pan from heat and set aside.
  • Spread out pitas on a rimmed baking sheet. Drizzle with remaining 1/3 cup oil and toss to coat; season with salt. Bake, tossing halfway through, until golden brown and crisp, 8-10 minutes. Remove pita chips from oven and set aside.
  • Finely grate remaining garlic into a small bowl. Add yogurt and lemon juice and mix well to combine; season with salt.
  • Melt butter in a small skillet over medium heat. Add cashews and cook, stirring, until nuts and butter are golden brown, about 5 minutes.
  • Divide pita chips among bowls and scoop some lemon yogurt over. Drain chickpeas and divide evenly among bowls, then spoon over some of the toasted cashews and brown butter. Sprinkle with sumac just before serving if desired.

EDAMAME HUMMUS WITH PITA CRISPS

Edamame Hummus With Pita Crisps image

From Cooking Light. Made for the super bowl party and it was a big hit with those that like edamame. It's green when it's done, and a bit thick. Next time, I will thin it a bit more with a bit more water. Delicious with chips too.

JADE HUMMUS WITH PITA CRISPS

Jade Hummus With Pita Crisps image

A great variation on the beloved hummus. Must have with the pita chips as the flavors were born to mingle. The pita chips cooked in my oven in 10 minutes, so you might want to periodically check that yours aren't burning. I added cilantro because... well, because I love it! Why else would I? ;o) Shamelessly stolen from The Soyfoods Council. Tips:

  • Use fresh herbs: Fresh herbs like cilantro, parsley, and mint add a burst of flavor to the hummus. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less since they are more concentrated.
  • Don't over-process the hummus: Over-processing the hummus can make it too smooth and lose its texture. Pulse the hummus in a food processor or blender until it is smooth, but still has a bit of a chunky texture.
  • Adjust the seasonings to taste: The amount of lemon juice, garlic, and salt you add to the hummus is a matter of personal preference. Taste the hummus as you go and adjust the seasonings until you reach the desired flavor.
  • Serve the hummus with a variety of dippers: Pita chips, vegetable crudités, and crackers are all great options for dipping into hummus. You can also use hummus as a spread on sandwiches or wraps.

Conclusion:

Jade hummus is a delicious and versatile dish that is perfect for any occasion. It is easy to make and can be customized to your liking. Whether you are serving it as an appetizer, a snack, or a meal, jade hummus is sure to be a hit.
