MARTHA STEWART'S HOT FUDGE SAUCE

Martha Stewart's Hot Fudge Sauce image

This came from a Martha Stewart cookbook. Wonderful flavor. Almost the same taste as Malley's hot fudge sauce in Cleveland. I have been asked for this recipe a lot. I am REQUIRED to double it every time I make it! It is good even just taking it by the spoonful after it is in the refrigerator. Do not cook it too long though or it will become fudge.

Time 10m

Yield 8-10 serving(s)

Number Of Ingredients 7

1/4 cup unsweetened cocoa powder (I usually add a little more)
1/2 cup sugar

  • Combine all ingredients in saucepan except for vanilla.

MARSHMALLOW-HOT FUDGE SAUCE

Marshmallow-Hot Fudge Sauce image

This decadently thick sauce is perfect if you're nostalgic for the incredibly thick hot fudge sauce served in old-fashioned ice cream parlors, many of which are disappearing. I was inspired to use airy marshmallows (which hopefully won't be disappearing anytime soon) as a foundation by the sauce served at Edy's, a well-loved ice cream fountain in Berkeley, California, that (sadly) no longer exists.Warning: This sauce is very, very thick!

Yield makes 2 cups (500 ml)

Number Of Ingredients 5

2/3 cup (160 ml) milk (whole or low-fat)
2 tablespoons (30 g) salted butter
30 large marshmallows (185 g)
8 ounces (230 g) bittersweet or semisweet chocolate, finely chopped
1/4 teaspoon vanilla extract

Steps:

  • Warm the milk and butter in a medium saucepan. Add the marshmallows and cook over low heat, stirring constantly, until they've melted. Remove from the heat and add the chocolate pieces. Let stand for 30 seconds, then stir until smooth. Add the vanilla. Serve warm.
  • This sauce can be stored in the refrigerator for up to 2 weeks. Rewarm it gently in a microwave or by stirring in a saucepan over very low heat. If the sauce becomes too thick, stir in a few spoonfuls of milk.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the sauce will taste. Look for chocolate with a cacao content of at least 60%.
  • Don't overheat the chocolate. Overheating can cause the chocolate to seize, which will make it difficult to stir and will also result in a grainy sauce.
  • Use a heavy-bottomed saucepan. This will help to distribute the heat evenly and prevent the sauce from burning.
  • Stir the sauce constantly. This will help to prevent the chocolate from sticking to the bottom of the pan and will also help to create a smooth sauce.
  • Add a little bit of salt. Salt helps to balance out the sweetness of the chocolate and also enhances the flavor of the other ingredients.
  • Serve the sauce warm. Hot fudge sauce is best served warm, so make sure to heat it up before serving.

Conclusion:

Marshmallow hot fudge sauce is a delicious and easy-to-make dessert topping that is perfect for ice cream, brownies, and other desserts. With just a few simple ingredients, you can make a rich and creamy sauce that will satisfy your sweet tooth. So next time you're looking for a special treat, give marshmallow hot fudge sauce a try.
