2 6-ounce salmon fillets
2 tablespoons chopped shallots

Steps:

  • Preheat oven to 450°F. Stir 2 tablespoons mustard and 1 tablespoon melted butter in small dish. Oil small rimmed baking sheet and place salmon on sheet, skin side down. Sprinkle salmon with salt. 1 1/2 cups Pinot Noir or other dry red wine
2 tablespoons freshly cracked black pepper
2 tablespoons finely grated peeled fresh gingerroot

3 tablespoons cold unsalted butter

4 (6 ounce) salmon fillets (about 1 inch thick)
1 tablespoon butter, divided
3 tablespoons shallots, minced
2 tablespoons dry white wine
3/4 cup chicken broth
1 tablespoon Dijon mustard
3/4 teaspoon cornstarch
4 teaspoons tarragon, minced

Steps:
