POLISH STIR-FRY- RACHAEL RAY (VEGETARIAN VERSION)

Polish Stir-Fry- Rachael Ray (Vegetarian Version) image

From Food Network website. I have changed this to be a vegetarian dish. You can substitute vegetarian kielbasa with the real thing, of course. I have made this a couple of times, and the taste changes depending on the type of pierogis used. You can use beet leaves rather than kale, if you'd like. This is a great way to use up some of those winter greens! I often leave out the kielbasa all together as there is only two of us here and it is just too large of a dish with it included. Vegetarian kielbasa is available under the Tofurkey and Boca brands at your local health food store (at least in California!)You can also order it online.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 14

3 tablespoons softened butter
1 (18 ounce) package pierogi, frozen (or other potato filled dumpling)
1 (1/2 lb) package vegetarian kielbasa, cut in slices on an angle (optional)
1 tablespoon vegetable oil (about enough to cover the pan in one turn)
1 tablespoon butter
1 large red onion, quartered and sliced
1 1/2 lbs kale, trimmed and coarsely chopped
1 lb sauerkraut, drained
1 teaspoon dried mustard or 2 tablespoons prepared mustard
1 teaspoon sweet paprika
salt and pepper
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
2 tablespoons chopped chives
1 cup sour cream (I use non-fat)

Steps:

  • Cover the bottom of a skillet with softened butter. Arrange pierogis in the pan in a single layer. Add 1 cup water to the pan.
  • Cover pan and place over medium high heat. Cook covered 8 minutes, remove lid and cook out any liquid in the pot.
  • Heat a large nonstick skillet over medium heat. Brown kielbasa and remove from pan. Cover kielbasa with foil to keep warm.
  • If using meat kielbasa, drain the fat from the pan.
  • In the same pan add 1 Tbsp oil and 1 Tbsp butter. Raise to high heat. Add onion to the pan and sauté for a few minutes to soften.
  • Add chopped kale in batches as it wilts into the pan. When kale is wilted, add sauerkraut.
  • Season stir-fry with mustard, paprika, salt and pepper. Return kielbasa to the pan.
  • Toss to combine and transfer to a serving platter.
  • Let the pierogis "stick" and brown in the butter as the liquid evaporates. Remove the crisp pierogis from heat to a plate.
  • Stir together the chopped herbs and sour cream with salt and pepper. Serve with pierogis.

GRANDMA'S POLISH PEROGIES

Grandma's Polish Perogies image

My grandfather is Polish, and his mother taught my grandmother how to make these delicious perogies. The recipe has been in the family for generations, with a few alterations of course! Serve plain, or with butter, sour cream, bacon, etc. Perfecting the perogie technique takes time, and after a while, you will develop your own system.

Time 2h

Yield 20

Number Of Ingredients 12

4 ½ cups all-purpose flour
2 teaspoons salt
2 tablespoons butter, melted
2 cups sour cream
2 eggs
1 egg yolk
2 tablespoons vegetable oil
8 baking potatoes, peeled and cubed
1 cup shredded Cheddar cheese
2 tablespoons processed cheese sauce
1 dash onion salt to taste
salt and pepper to taste

Steps:

  • In a large bowl, stir together the flour and salt. In a separate bowl, whisk together the butter, sour cream, eggs, egg yolk and oil. Stir the wet ingredients into the flour until well blended. Cover the bowl with a towel, and let stand for 15 to 20 minutes.
  • Place potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash with shredded cheese and cheese sauce while still hot. Season with onion salt, salt and pepper. Set aside to cool.
  • Separate the perogie dough into two balls. Roll out one piece at a time on a lightly floured surface until it is thin enough to work with, but not too thin so that it tears. Cut into circles using a cookie cutter, perogie cutter, or a glass. Brush a little water around the edges of the circles, and spoon some filling into the center. Fold the circles over into half-circles, and press to seal the edges. Place perogies on a cookie sheet, and freeze. Once frozen, transfer to freezer storage bags or containers.
  • To cook perogies: Bring a large pot of lightly salted water to a boil. Drop perogies in one at a time. They are done when they float to the top. Do not boil too long, or they will be soggy! Remove with a slotted spoon.

PIEROGI STIR FRY

Pierogi Stir Fry image

A simple yet humble recipe courtesy of my mother in law. Heck, I didn't know what to call this recipe! ;) We use store bought Cheemo brand frozen perogie from Canada for this dish, but you can certainly use your own homemade perogie. (I hope one day to learn how to make them and spell the word correctly.) Sometimes I add a potato to the mix to "stretch" the meal even though perogies already contain potatoes. The Cheemo brand has a cheddar cheese/potato variety we really like and an herb/roasted garlic one, too. I noticed the Cheemo site has a similar recipe to this one. Check it out! Serve with a tossed green salad that contains beets, in keeping with the Ukrainian/Russian/Eastern European theme. A Recipezaar member is going to have to set me straight on the correct spelling of pierogies/perogie/-both singular and plural forms.

Provided by COOKGIRl

Categories     Vegetable

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

3 -4 slices bacon
12 -16 pierogi, frozen (a bag of the Cheemo brand is 18 ounces in total, use about 12-16 pierogies for this recipe)
2 small carrots, peeled and cut into thin slices
1 large russet potato, sliced thinly (unpeeled or not)
1 medium yellow onion, peeled and cut into crescents
1 medium red bell pepper (stemmed, seeded, membrane removed and sliced)
2 cups red cabbage, coarsely chopped (or a mix of green and red cabbage)
1 garlic clove, peeled and minced
oil, for frying
salt and black pepper, to taste
sour cream, for garnish

Steps:

  • In a large frying pan, cook the bacon until crisp. Set aside to drain and cool.
  • Remove the bacon fat (or not) and add 2 tablespoons oil.
  • Add the frozen perogies (no need to thaw), carrots, and potato (if using) and cook on medium-high heat for about 10 minutes.
  • Add the onion and bell pepper; cook another 5-7 minutes, until the onion and bell pepper start to char at the edges.
  • Stir in the cabbage and garlic. Cook another 2-3 minutes. Reduce heat if necessary.
  • Crumble the bacon and stir it into the pan.
  • Season with salt and pepper to taste.
  • Serve with sour cream.
  • Servings are estimated.

Tips:

  • Mise en Place: As with any stir-fry, having all your ingredients prepped and ready to go before you start cooking is essential. This will help you ensure that everything cooks evenly and that you don't end up with overcooked or undercooked ingredients.
  • Use a Hot Wok or Pan: A hot wok or pan is essential for getting a good sear on your vegetables and meat. If your pan is not hot enough, the food will steam instead of fry, resulting in a soggy, bland dish.
  • Don't Overcrowd the Pan: When stir-frying, it is essential not to overcrowd the pan. If you add too much food at once, it will not cook evenly, and you will end up with a mushy mess. Instead, cook the food in batches if necessary.
  • Use a Variety of Vegetables: Feel free to use any vegetables you like in your stir-fry. Some good options include broccoli, carrots, bell peppers, snow peas, and mushrooms.
  • Marinate the Chicken: Marinating the chicken before cooking will help to tenderize it and add flavor. You can use a simple marinade made with soy sauce, rice vinegar, and ginger, or you can get more creative with your ingredients.
  • Make the Pierogi Pot Stickers Ahead of Time: Pierogi pot stickers can be made ahead of time and frozen. This makes them a great option for a quick and easy weeknight meal. Simply heat them in a pan with some oil until they are crispy and browned.
  • Serve with Herbs and Sour Cream: Pierogi pot stickers are traditionally served with herbs and sour cream. This adds a delicious creamy richness to the dish. You can also serve them with other dipping sauces, such as soy sauce or hoisin sauce.

Conclusion:

This Polish stir-fry and pierogi pot stickers with herbs and sour cream is a delicious and easy-to-make dish that is perfect for a weeknight meal. The stir-fry is packed with flavor and vegetables, and the pierogi pot stickers are a fun and unique twist on the classic Polish dish. With its combination of flavors and textures, this dish is sure to please everyone at the table.
