1 frozen pie crust, thawed, rolled out
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon

2 ounces milk

  • Make pastry:
  • Cut butter into bits and freeze. In a food processor pulse together flour, sugar, and salt. Add frozen butter and pulse mixture just until it resembles coarse meal. Add 4 tablespoons ice water and pulse until barely combined. Transfer dough to a bowl and stir in just enough ice water to form a ball. Flatten dough into a 6-inch disk. Chill dough, wrapped in plastic wrap, at least 2 hours and up to 1 day.

Juice of 1 lemon
1/2 cup finely chopped pecans
1/3 cup brown sugar

1 tablespoon butter
3/4 cup heavy cream, whipped

Steps:

  • Preheat oven to 425 degrees. Roll out pastry and line a nine-inch tart pan. Prick the bottom, line with foil and weight with dry beans or pastry weights. Bake for about six minutes, until the pastry looks dry but has not begun to color. Remove foil and continue baking about six minutes longer, until the pastry is pale gold. Remove from oven and lower to 375 degrees.
  • Slice peaches uniformly about one-half-inch thick and toss in a bowl with lemon juice.

1 egg, lightly beaten

1 can (26 ounces) pear halves, drained and thinly sliced lengthwise

2 teaspoons peach nectar

Steps:

  • Thaw puff pastry at room temperature for 20 to 30 minutes. Unfold. If pastry does not unfold easily, thaw for an additional 5 to 10 minutes and retry.
  • Preheat oven to 400 degrees F.
  • On a lightly floured surface, roll out pastry to a 10 by 12-inch rectangle. Transfer to an ungreased baking sheet. With a dry pastry brush, brush away any excess flour.

½ cup raspberry jam, plus more as needed
1 cup whole milk
½ package instant vanilla pudding mix
¼ cup vanilla coffee creamer
2 large egg whites, room temperature
¼ teaspoon cream of tartar
½ cup granulated sugar
4 tablespoons seedless raspberry jam, divided

  • Make the crust: Preheat the oven to 350°F.

Steps:

  • In a small bowl, combine the cake flour, whole wheat flour, 2 tablespoons sugar and salt. Cut in butter until crumbly. Add oil and toss with a fork. Gradually add water and buttermilk, tossing with a fork until mixture sticks together. Shape dough into a ball; flatten dough. Cover and refrigerate for at least 1 hour., On a lightly floured surface, roll out dough into a 14-in. circle. Transfer to a parchment-lined baking sheet. In a small bowl, combine 3 tablespoons sugar and all-purpose flour; add peaches and toss to coat. Spoon over pastry to within 2 in. of edges. Fold edges of pastry over peaches, leaving center uncovered. Brush folded edge with milk; sprinkle with remaining sugar. , Bake at 400° for 25-30 minutes or until crust is golden brown and filling is bubbly. 1 (12 ounce) can cranberry juice concentrate
4 pilsberry refrigerated pie crusts
2 quarts canned peaches in juice
1/2 cup cranberries
1 tablespoon cornstarch
1 cup sugar

Steps:

  • Preheat oven to 350°F.
  • In a 5 quart no-stick pot, add peaches, cranberries, and sugar, Bring to a boil stirring constantly and remove from heat.
  • Add cornstarch to cold cranberry juice and stir until mixed well. Pour immediately into hot peach mix. Stir well and set filling aside.
  • Spray 2 pie baking dishes with no-stick spray and line the bottoms of pie dishes with soft pie shells pressing to bottom and sides. Trim off excess crusts.
  • Moisten the edges that make contact with the top with watter or egg wash, which ever you prefer.
  • Fill bottom crusts with equal amounts of filling, stopping about 1/4 inch from top.
  • Unroll and cover with remaining 2 pie shells, pressing down around the edges to seal them together, cut off excess crust.
  • With a sharp knife cut at least 3 long slits in tops to allow pie to vent.
  • Bake at 350°F for 35 to 40 minutes and tops are golden brown.
  • Remove from oven and allow to cool 45 minutes.

For the crust:
1/2 cup sliced almonds
3/4 cup all-purpose flour
2 tablespoons granulated sugar
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces
For the glaze:
1 peach, diced
1/2 cup granulated sugar
2 wide strips lemon zest 1 teaspoon fresh lemon juice
For the filling and topping:
1/2 cup ricotta cheese
1 8-ounce package cream cheese, at room temperature
1/4 cup confectioners' sugar
Pinch of freshly grated nutmeg
2 firm peaches, thinly sliced
1/2 cup raspberries

Steps:

  • Make the crust: Preheat the oven to 375 degrees F. Spread the almonds on a baking sheet and bake until slightly golden, about 5 minutes. Transfer to a bowl and let cool completely.
  • Combine the flour, 1/3 cup of the toasted almonds, the granulated sugar and salt in a food processor and pulse until finely ground. Add the butter and pulse until the mixture looks like coarse meal. Add 2 tablespoons ice water and pulse until the dough just comes together. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly and refrigerate until slightly firm, about 15 minutes. Unwrap the dough and press evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Freeze until firm, about 10 minutes.
  • Place the tart pan on a baking sheet. Line the crust with foil and fill with pie weights or dried beans. Bake until the edge of the crust is slightly golden, about 20 minutes. Remove the foil and weights and continue baking until the crust is golden brown all over, 15 to 20 more minutes. Transfer to a rack to cool completely.
  • Make the glaze: Combine the diced peach, granulated sugar, lemon zest and juice, and 1 cup water in a small saucepan. Bring to a simmer over medium heat and cook until the peach is soft and the glaze is thickened, about 10 minutes. Remove the lemon zest; let the glaze cool.
  • Make the filling: Mix the ricotta, cream cheese, confectioners' sugar and nutmeg in a bowl with a mixer until smooth; spread evenly in the crust. Arrange the sliced peaches on top of the filling in concentric circles. Brush with all but about 1 tablespoon of the glaze. Gently toss the raspberries with the remaining glaze, then scatter on top of the tart along with the remaining toasted almonds. Serve immediately or cover and refrigerate up to 4 hours.

Filling
1/4 cup sugar
3 tablespoons all purpose flour
2 teaspoons grated lemon peel
6 ripe medium peaches, peeled, halved, pitted, cut into 1/2-inch-thick slices (about 4 cups)
2 tablespoons honey
2 tablespoons chilled unsalted butter, cut into small pieces
2 tablespoons sliced almonds
2 tablespoons peach preserves, melted
Mascarpone Cream
1 cup chilled whipping cream
6 tablespoons mascarpone cheese*
2 tablespoons sugar
1/4 teaspoon vanilla extract

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour.
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold overhang in and press to form double-thick sides. Press inside edge of crust to push it 1/8 to 1/4 inch above top edge of pan. Pierce bottom of crust with fork. Refrigerate 1 hour.
  • Preheat oven to 400°F. Bake tart crust until golden, piercing with fork if bubbles form, about 25 minutes. (Can be made 1 day ahead. Cool; wrap in plastic and store at room temperature.)
  • For filling:
  • Mix sugar, flour, and lemon peel in large bowl to blend. Add peaches and toss to coat. Pour into baked crust. Drizzle honey over peach mixture; dot with butter and sprinkle with almonds. Bake until peaches are tender and almonds are toasted, about 35 minutes. Brush fruit and almonds with peach preserves. Cool 15 minutes before serving. (Can be made 6 hours ahead. Store tart at room temperature.)
  • For mascarpone cream:
  • Using electric mixer, beat cream, mascarpone, sugar, and vanilla in large bowl until peaks form. Slice tart into 6 wedges and serve with dollops of mascarpone cream.

5 large ripe peaches, peeled and sliced
1/2-3/4 cup sugar (the riper the fruit, the less sugar necessary)
1/8 teaspoon ascorbic acid
1/4 cup flour, plus
1 tablespoon flour
1/2 cup heavy cream
1 egg
1/8 teaspoon nutmeg
2 teaspoons vanilla extract
1 quart fresh raspberry
decorator sugar

Steps:

  • Peel and slice the peaches.
  • Whisk together 1/4 cup of the sugar, the ascorbic acid, and 1 tablespoon of Signature Secrets or flour (or 1 1/2 teaspoons Instant ClearJel), then mix with the peaches and set aside. Roll the pie crust dough into a 14- to 15-inch circle to fit an 11- to 12-inch tart pan or baking dish. Place it into the pan.
  • Stir together the cream, the remaining sugar and thickener, the egg, nutmeg and vanilla; spread over the bottom of the crust. Place the peaches onto the cream filling, arranging them in concentric circles. Spoon any juice from the bowl over the peaches. Fold the edges of the crust in toward the center.
  • Bake the tart in a preheated 425°F oven for 20 minutes. Reduce the oven heat to 375°F; tent the edges of the tart with foil, and bake for an additional 30 to 35 minutes. Cool at least 20 minutes before serving. If pie won't be served right away, refrigerate it, and then bring to room temperature before serving. Just before serving, sprinkle with fresh berries and sugar. This is best served the same day.
