3 cups all purpose flour

1 teaspoon baking soda
1 teaspoon salt

1 cup chopped pecans
1 8-ounce can crushed pineapple with juice
Frosting
2 8-ounce packages cream cheese, room temperature
1 cup (2 sticks) unsalted butter, room temperature
3 cups powdered sugar
2 teaspoons vanilla extract
1/2 cup chopped toasted pecans

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter and flour two 9-inch round cake pans with 2-inch-high sides. Whisk first 5 ingredients in large bowl to blend. Whisk in oil, eggs, and vanilla. Stir in bananas, pecans, and pineapple. Divide batter equally between prepared pans. Bake cakes until tester inserted into center comes out clean, about 30 minutes. Cool cakes in pans on racks 10 minutes. Run knife around cake sides and turn out onto rack to cool completely.
  • For frosting:
  • Using electric mixer, beat cream cheese and butter in large bowl to blend. Beat in sugar and vanilla. Place 1 cake layer on plate. Spread 1 1/2 cups frosting over. Top with second cake layer. 1 cup canola oil
1 cup light brown sugar
4 large eggs, lightly beaten
3 cups unbleached all-purpose flour
1 1/2 cups shredded carrots
1 1/2 cups shredded coconut
1 cup chopped walnuts, plus more for garnish
3 tablespoons ground cinnamon
1 tablespoon almond extract
1 tablespoon baking powder
1/2 teaspoon salt
One 15-ounce can pineapple rings, drained (reserve the liquid for the frosting) and chopped into 1/2-inch pieces
8 ounces cream cheese, at room temperature
3 cups confectioners' sugar
4 tablespoons unsalted butter, at room temperature
1/4 cup reserved pineapple juice from the canned pineapple

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease two 9-inch cake pans with the butter.
  • In a large bowl, add the granulated sugar, oil, brown sugar and eggs and mix together. Add the flour, carrots, coconut, walnuts, cinnamon, almond extract, baking powder, salt and pineapple and fold the ingredients together.
  • Pour the batter into the prepared pans and place the pans on a baking sheet. Bake until a toothpick inserted into the centers comes out clean, about 40 minutes. Place the cakes on a cooling rack until completely cooled, about an hour.
  • For the frosting: Meanwhile, in a stand mixer fitted with a paddle attachment, add the cream cheese, confectioners' sugar, butter and pineapple juice. Mix until smooth and incorporated.
  • To frost the cake: Carefully remove the cooled cakes from the pans. Using an offset spatula, place a dollop of the frosting on the cake stand and spread to create a sticky base. Place one layer on the frosting on the cake stand. Thickly frost the entire top of the cake and place the other layer atop the now frosted one. Beginning with the top of the new layer, frost generously. Place a large dollop of frosting on the side of the cake and spin the cake to evenly frost the sides. Garnish with the remaining walnuts.

1 1/2 cups butter, softened

3 cups cake flour, sifted

6 ounces shredded coconut (for coating sides of cake)

1/3 c butter

My mom used to make this for my brothers' birthday cake every year. I don't know where she got the recipe, she just bought the ingredients and made the cake. I make it for my husbands' birthday now. There are so many ways to tweak this, such as adding coconut or well drained chopped mandarin oranges, but this is our favorite.

1 (18 1/4 ounce) package golden butter recipe cake mix
3 eggs (or as called for by your cake mix)
1/2 cup butter (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 pint heavy whipping cream, chilled
20 ounces crushed pineapple, well drained
2 -3 tablespoons confectioners' sugar

Steps:

  • Let pineapple drain about 2 hours before baking.
  • According to the cake mix, have 1 stick of butter and 3 large eggs at room temperature.
  • Place a medium bowl and the beaters of an electric blender in the freezer.
  • Bake cake in any size pan you wish.
  • When cake is done, and cooled, add whipping cream and powdered sugar (more or less according to your taste) to the bowl that was in the freezer.
  • Use the cold beaters to whip the cream until set. (about 4 minutes?)
  • Blend in pineapple.
  • Cream should be thick enough to stay on the blenders when you lift them out.
  • Frost cake.

1 small fresh pineapple
1 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 cup granulated sugar
2 tablespoons butter
1 cup whipping cream
2 tablespoons powdered sugar
1/4 cup pineapple-orange marmalade
1 tablespoon water

Steps:

  • Heat oven to 350. Grease and flour an 8" springform pan.
  • Peel, core, and cut pineapple into 1/2" pieces. You need 2 cups.
  • In a blender or food processor, puree a third of the pineapple to make 1/2 cup puree, then add water to measure 2/3 cup. The remaining pineapple pieces will be used when assembling the cake.
  • In a small bowl, stir together flour, baking soda, and salt. Using an electric mixer on high speed, beat eggs for 4 minutes. Gradually add granulated sugar, beating 4 minutes on medium speed (or until sugar almost dissolves). Gradually add flour mixture, beating on low speed until combined.
  • Heat pineapple puree and butter until butter melts; Add to batter. Pour batter into prepared pan.
  • Bake 30 minutes or until toothpick comes out clean.
  • Cool 10 minutes on wire rack. Remove from pan, cool completely on wire rack.
  • Prepare topping/filling when cake is cool. Cut cake horizontally into two layers.
  • Beat whipping cream with powdered sugar until soft peaks form.
  • Place one layer on a serving platter. Spread with half of the whipped cream. Cover with half of the pineapple pieces. Top with second cake layer. Repeat whipped cream and pineapple pieces.
  • Heat marmalade with 1 tablespoon water. Cool slightly, then drizzle over cake.
  • Chill until ready to serve.

It's zucchini time and I can't cook it fast enough. I have so much of it in my garden this year. This Tropical chocolate cake has a hint of cinnamon, dried cherries but you can use raisins and my Zucchini, Pineapple, Ginger Jam recipe #95600 in the frosting but you can use any pineapple jam.

2 1/2 cups all-purpose flour
2 tablespoons cocoa
1 tablespoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups packed shredded zucchini (Skin and all)
1/2 cup unsalted butter, room temp
1/2 cup vegetable oil
2 cups sugar
3 large eggs
1 teaspoon vanilla
1 cup dried tart cherry
8 ounces cream cheese, softened
1/2 cup pineapple preserves (or Zucchini, Pineapple, Ginger Jam Zucchini, Pineapple, Ginger Jam)
1/2 cup coconut

Steps:

  • Sift by hand or mix all dry ingredients in a food processor with metal blade set aside.
  • In the food processor add butter, oil and sugar mix till creamy add eggs then vanilla through feed tube while machine is running.
  • Add zucchini then flour mixture.
  • Add cherries and pulse to mix inches Bake in a geased and floured bundt pan at 350 degrees for 50-60 minutes.
  • When toothpick inserted into cake cames out clean.
  • In the food processor mix cheese and jam spread on cooled cake.
  • Press coconut into frosting of cake.
