ROSé-POACHED PEACHES WITH WHIPPED MASCARPONE

Rosé-Poached Peaches with Whipped Mascarpone image

Peaches are enjoying the "rosé all day" trend of summer. This seasonal fruit gets poached in an aromatic liquid, then served alongside sweetened whipped mascarpone cheese and topped with crunchy candied pistachios. It's an incredibly easy showstopper dessert.

Provided by Zac Young

Categories     dessert

Time 30m

Yield 8 servings

Number Of Ingredients 14

1 vanilla bean
One 750-milliliter bottle rosé wine
1 cup honey
1 tablespoon black or pink peppercorns
1 teaspoon fennel seeds
2 navel oranges
2 lemons
4 ripe peaches, halved and pitted
8 ounces mascarpone cheese
Kosher salt
1/2 cup heavy cream
1/3 cup pistachios, roughly chopped
1 tablespoon light brown sugar
Pinch cayenne pepper

Steps:

  • Halve the vanilla bean lengthwise with a sharp paring knife. Set one half aside and put the other half in a large pot. Add the rosé, 3/4 cup of the honey, peppercorns, fennel seeds and 1 cup water. Use a vegetable peeler to remove the zest of the oranges and lemons and add the zest to the pot. Squeeze in the juice of 1 orange. Bring to a simmer over medium-high heat, stirring occasionally to dissolve the honey. Reduce the temperature to low and add the peaches (the liquid should be still and there should be no simmering bubbles). Cook, flipping the peaches halfway through, until they are softened and the skins start to pull away, 10 to 12 minutes.
  • Meanwhile, put the mascarpone in a large bowl and whisk until loosened. Scrape in the seeds from the remaining vanilla bean half and add the scraped vanilla bean pod to the poaching liquid. To the mascarpone, add the remaining 1/4 cup honey, 1/2 teaspoon salt and the heavy cream and whisk until medium stiff peaks form, 3 to 4 minutes. Refrigerate until ready to use.
  • Add the pistachios, light brown sugar and cayenne pepper to a small skillet and cook over medium-high heat, stirring frequently, until the sugar is dissolved, syrupy and evenly coats the pistachios, 2 to 3 minutes. Transfer to a parchment-lined plate and let cool completely, about 5 minutes (the coating will be sticky but will harden as the nuts cool).
  • Divide the whipped mascarpone among 8 serving bowls. Use a slotted spoon to remove the peaches and add one half to each bowl. Evenly sprinkle the pistachios over the top.

POACHED PEACHES IN WHITE WINE GELATIN

POACHED PEACHES IN WHITE WINE GELATIN image

Categories     Fruit     Dessert     Freeze/Chill

Yield 6 servings

Number Of Ingredients 9

3/4 to a full bottle of your favorite dry white wine (a previously opened bottle would be fine)
zest of one lemon or half an orange, 1/2 teaspoon reserved
seeds of one vanilla bean
3/4 cup sugar, or to taste
3 peaches--preferably freestone--halved and pitted but with the skins ON
1 envelope of unflavored gelatin
1 cup of frozen berries, thawed
whipped cream, optional
mint sprigs optional

Steps:

  • In a saucepan combine the wine, 3/4 of the lemon zest, and the seeds of the vanilla bean and bring to a slow simmer. Add the peach halves and return to a simmer, covered for 3-5 minutes, depending on the firmness of the peaches. When done, the peaches should easily be pierced with a sharp knife. Allow the peaches to cool slightly in the wine mixture until cool enough to handle, but still warm. Remove the peach skins and discard. Cut the peach halves as you desire, into quarters, slices, or chunks and divide among six small glass bowls or custard cups. Strain the wine mixture (use a coffee filter if you want a really clear gelatin) and then whisk in the gelatin crystals until completely dissolved. Pour the gelatin mixture over the fruit and place the dishes in the refrigerator for up to two hours or until the gelatin has set. To serve, mix the reserved lemon zest with the berries and divide the berry mixture among the six desserts. If desired, garnish with a spoonful of whipped cream and a sprig of mint.

PEACHES POACHED IN RED WINE

Peaches Poached in Red Wine image

Melocotones al Vino Tinto You will find this fruit dessert all over Aragon, Spain. It is usually homemade when peaches are in season, then preserved in large jars filled with the cooking syrup. This same recipe can be used to poach pears or nectarines. Serve peaches with sauce hot or cold.

Provided by Vicki Butts (lazyme)

Categories     Fruit Desserts

Time 45m

Number Of Ingredients 7

6 peaches (firm but ripe)
lemon juice
2 c dry red wine
1 c water
2 cinnamon sticks, broken into thirds (plus additional for garnish)
1/2 c sugar
6 lemon slices

Steps:

  • 1. Blanch peaches in medium saucepan of boiling water 30 seconds. Transfer to bowl of cold water using slotted spoon. Pull off peel, using small sharp knife.
  • 2. Rub peaches all over with lemon juice.
  • 3. In a large pot, bring the wine, water, cinnamon sticks, sugar, and 3 of the lemon slices to a boil, and simmer 15 minutes.
  • 4. Add peaches and simmer 20 minutes, turning them occasionally to color evenly with wine syrup. Let peaches steep in syrup several hours or overnight at room temperature.
  • 5. Remove peaches from syrup and set aside. Boil the syrup down over high heat to 1 cup. Let cool completely.
  • 6. Serve peaches whole or sliced in wedges. Spoon syrup over them and garnish each portion with a piece of cinnamon stick and half a lemon slice.

Tips:

  • Choose ripe but firm peaches for poaching. Overripe peaches will become mushy during the poaching process.
  • Use a variety of spices and flavorings to create different flavor combinations. Some popular options include vanilla bean, cinnamon sticks, star anise, cloves, and nutmeg.
  • Adjust the amount of sugar in the poaching liquid to taste. If you prefer sweeter peaches, add more sugar. If you prefer tarter peaches, add less sugar or omit it altogether.
  • Poach the peaches until they are tender but still hold their shape. Overcooked peaches will become mushy.
  • Serve the poached peaches warm or chilled. They can be enjoyed on their own, or used as a topping for yogurt, oatmeal, or ice cream.

Conclusion:

Poached peaches are a delicious and versatile dessert that can be enjoyed in many different ways. With just a few simple ingredients, you can create a classic dessert that is sure to impress your family and friends. So next time you're looking for a sweet treat, give poached peaches a try!
