1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup hulled sesame seeds, toasted

Steps:

  • Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
  • Using a spoon, drop cookie batter, about 1 tablespoon at a time, onto prepared baking sheets, allowing at least 2 inches between cookies for spreading.
  • Bake until golden, 6 to 8 minutes. Remove from oven, and cool on a wire rack.

1 cup white sugar
1 ½ cups shortening
¾ cup milk
.063 teaspoon anise oil
2 ounces sesame seeds

Steps:

  • Combine flour and sugar in a bowl. Cut in shortening with a pastry blender-or work with your hands - until mixture resembles coarse meal.
  • Add anise oil (optional) small amount for it is very strong, to 1/2 cup of the milk and add to flour mixture. Gradually add more of the milk mixing until dough holds together.
  • Pull off small portions of dough and roll between palms of the hands into a roll about finger size. Roll in sesame seeds. Seeds stick better if put in sugared water and taken out and put on a clean lintless cloth. Roll on cloth with seeds, then flatten out too about 1/4-inch thickness. Cut into 2 inch strips, place on ungreased baking sheet.
  • Bake at 350 degrees F (180 degrees C) for 20 to 25 minutes, or until golden brown. Remove, cool completely, then store in an airtight container.

3/4 cup granulated sugar
3/8 cup butter, softened

I got several recipes from a Korean friend at the university. This is one of the few sweets recipes - a no bake gluten free candylike cookie which looks quite pretty. For the syrup I've so far used molasses, agave and rice syrup successfully. Cooking time doesn't include cooling time.

50 g black sesame seeds
65 g brown sugar
8 tablespoons syrup

Steps:

  • Roast white and black sesame seeds seperately in dry pans until they start to pop.
  • Remove from pan onto plates.
  • Slowly heat sugar and syrup in a pan, stirring constantly, until sugar dissolves.
  • Divide the sugar and syrup mixture, mix one half with the white and the other with the black sesame seeds.
  • Spread both mixes onto seperate parchment or non stick baking paper sheets, cover with another sheet and flatten, then remove top sheets and lay the black sesame layer on top of the white one and remove the sheet from the black layer.
  • With the help of the underlying sheet roll the black and white layers tightly into a roll, so that the white layer encloses the black one.
  • Let the roll cool, then slice into about 1/4 to 1/3 inch slices.

3/4 teaspoon baking powder
1/2 teaspoon Chinese five spice powder
1/2 teaspoon salt (or less)

1 egg

1/4 cup sesame seeds, toasted

Steps:

  • Preheat oven to 350.
  • Toast sesame seeds in a frying pan at medium heat. Stir them occasionally and watch them like a hawk! They will stay light and then suddenly brown in a few seconds - remove them from heat to a small bowl once they are golden brown.
  • Combine flour, baking powder, spice powder, salt, brown sugar, corn oil, egg, vanilla in a mixing bowl. Mix well.

3/4 cup brown sugar
1/4 cup sugar (caster or superfine)

  • Preheat oven to 350F/175C & grease an oven tray.
  • In a large bowl mix sugars together.
  • Add remaining ingredients. NOTE: Do not pour tahini straight from container. Scoop from bottom as mixture separates & you don't want just the oil! If you buy a particularly runny tahini, use 1/4 cup tahini, 3/4 cup peanut butter.
  • Mix ingredients til well combined. If mixture is too sticky/runny add some flour/gluten-free flour to the mix.
  • Spoon 1 1/2 teaspoons of the mixture onto the greased baking tray. TIP: they will spread out while baking so don't crowd tray. You may need to do two batches.
  • With a fork, make a slight indent to flatten cookies.
  • Bake for 8 minutes for soft cookies, >10 (til browned) for crisper cookies.
  • Let cool for 10-15 before touching otherwise they will crumble.

3 cups cake flour, plus more
1 1/4 cups (2 1/2 sticks) chilled unsalted butter, cut into pieces
1 cup granulated sugar
1 large egg
1 large egg yolk
Frosting and Assembly:
1/2 cup black sesame seeds
1/4 teaspoon vegetable oil
1/2 cup white sesame seeds
4 cups powdered sugar
1 teaspoon fresh lemon juice
Pinch of kosher salt
Special equipment:
A 3"-diameter cookie cutter

Steps:

  • Cookies:
  • Whisk baking powder, salt, and 3 cups cake flour in a small bowl to combine. Using an electric mixer on high speed, beat butter and sugar in a medium bowl until well combined (butter does not need to be fluffy), about 3 minutes. Add egg and egg yolk and beat just to combine. Reduce speed to low and gradually mix in dry ingredients. Divide dough in half and form into 3/4"-thick disks. Wrap in plastic and chill until firm, about 2 hours.
  • Place racks in upper and lower thirds of oven and preheat to 325°F. Let 1 disk of dough sit at room temperature until slightly softened, about 5 minutes.
  • Roll out dough on a lightly floured sheet of parchment paper, shifting often on sheet and dusting with more flour as needed to keep from sticking, until about 1/4" thick. Punch out rounds with cookie cutter and transfer to parchment-lined baking sheets, spacing 1 1/2" apart. Pat scraps into a 3/4"-thick disk. Chill 15 minutes.
  • Bake cookies, rotating baking sheets halfway through, until edges are golden brown, 12-15 minutes. Transfer cookies to wire racks and let cool. Cut out and bake scraps, then repeat process with remaining disk of dough.
  • Do Ahead
  • Dough can be made 1 month ahead; freeze. Cookies can be baked 2 weeks ahead; wrap tightly and freeze. Thaw before decorating. Frosting and Assembly Toss black sesame seeds and oil in a medium shallow bowl to coat seeds (this will keep them jet-black and shiny). Place white sesame seeds in another medium shallow bowl.
  • Frosting and assembly:
  • Whisk powdered sugar, lemon juice, salt, and 1/3 cup water in a large bowl until smooth. Place half of the icing in a pastry bag fitted with a 1/8" tip. (Or use a large resealable plastic bag and cut a small opening in 1 corner.)
  • Working with 1 cookie at a time, pipe down center and then around the edge of half of the cookie to create a semicircle. Pipe icing inside border to fill, then use a small offset spatula to evenly spread over half of the cookie. Working quickly so icing is still wet, dip frosted part of cookie into white sesame seeds, patting gently to adhere, then letting excess fall back into bowl. Let sit 15 minutes for icing to set.
  • Repeat process on the other half of the cookie, dipping into black sesame seeds, and let sit at least 20 minutes before serving

1 bottle anise extract
1 dash(es) of salt
3-4 Tbsp ground anise seed
2 Tbsp baking powder
6-7 c flour
6 large eggs
1 1/2 c oil
sesame seeds, untoasted

Steps:

  • 1. Combine the sugar, salt, anise & baking powder.
  • 2. Add the anise extract, eggs & flour. Mix well.
  • 3. Add 6 cups of flour first to make a soft pliable dough. If needed add more flour 1/4 cup at a time.
  • 4. Scoop out 1/4 cup fulls.
  • 5. Roll each about 6"-7" long.
  • 6. Pinch edges to make a nice donut shape.
  • 7. Dip the tops of each one into sesame seeds.
  • 8. Place on ungreased baking sheet about 2" apart.
  • 9. Bake at 350' for about 6 minutes for a soft cookie or longer for a crispy cookie.
  • 10. ***If you don't want to go through the step of making them into doughnut shape, simply take the 1/4 cup fulls of dough. Roll into ball. Flatten slightly with a glass then dip in sesame seeds.

Steps:

  • Scatter the sesame seeds on a baking sheet and toast in a 350-degree oven until a light golden brown.

  • Combine flour, baking powder, soda & salt. Set aside.

1 cup creamy peanut butter (not natural)
3/4 cup sugar
1 large egg
1 teaspoon baking soda
5 tablespoons black sesame seeds

Steps:

  • Preheat oven to 350 with racks in lower and upper thirds.
  • Beat together peanut butter and sugar in a medium bowl with an electric mixer until combined well, about 2 minutes. Beat in egg and baking soda.
  • Place sesame seeds in a shallow bowl. Roll level teaspoons of dough into balls, then roll in seeds to coat. Arrange balls about 1 inch apart on 2 ungreased baking sheets.
  • Bake cookies, switching position of sheets halfway through, until puffed and cracked, about 10 minutes. Cool on baking sheets 2 minutes, then transfer to racks to cool.

2 1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 cup vegetable shortening
2 eggs
1/4 cup milk
1 teaspoon vanilla extract
3 drops anise oil (optional)
3/4 cup toasted sesame seeds

Steps:

  • Preheat the oven to 375 .
  • In a large bowl, sift the flour, sugar, and baking powder together.
  • Work in the shortening as you would when making pie dough, to the consistency of coarse meal.
  • Beat into the dough the eggs, milk, vanilla, and anise oil. The dough should be moist but not sticky. If the dough is too sticky, add a little more flour.
  • Take a small portion of the dough and roll out to a 1/2 inch diameter cylinder.
  • Spread some sesame seeds on a large piece of waxed paper and roll the dough in the seeds until the cylinder is completely covered.
  • Cut the dough into 1 1/2 pieces on a diagonal.
  • Place the cookies on a lightly greased sheet pan and bake for approximately 10-15 minutes, or until golden brown.
  • Cool the cookies on a rack and store in an airtight container.

This recipe promised to be tasty. I can't wait to try these. I'm sorry I haven't tried these yet and don't know how many cookies it will make.

1/2 cup sesame seeds
4 cups flour, white
1 cup sugar, white
1 cup butter
3 eggs
1 tablespoon caraway seed
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon baking soda

Steps:

  • Preheat oven to 325 degrees Fl.
  • In a large bowl, sieve the flour with salt and baking soda.
  • Add sugar, butter, 2 eggs, caraway seeds and blend well.
  • Add the milk a little by little and knead to a smooth dough.
  • Roll out on a floured board 1cm thick and cut out with fancy cookie cutters.
  • Brush with remaining well beaten egg and sprinkle heavily with sesame seeds.
  • Place on a greased baking sheet.
  • Bake in a 325 degree oven for 10 minutes.
  • Cool and enjoy with a good cup of tea. .

Tips:
