Yield Serves 4

Number Of Ingredients 11

1/4 cup whole pecans, broken into 1/2-inch pieces
5 tablespoons unsalted butter
2 Granny Smith apples, peeled and cut into 1/2-inch dice
5 tablespoons sugar
Juice of 1/2 lemon
1/2 teaspoon ground cinnamon
1/2 cup golden or dark raisins
8 sheets matzo
3 cups boiling water
4 large eggs
Pinch of coarse salt

Steps:

  • Preheat the oven to 350 degrees. Place pecans in a single layer on a rimmed baking sheet; toast in oven until they are light golden and aromatic, about 7 minutes. Shake pan halfway through baking to make sure the nuts toast evenly. Set aside to cool.
  • In a medium saute pan set over medium-high heat, melt 1 tablespoon butter. Add apples; cook until lightly browned, about 5 minutes. Sprinkle 3 tablespoons sugar over apples; cook, stirring occasionally, until sugar has dissolved and caramelized, about 8 minutes. Stir in lemon juice, cinnamon, and raisins. Remove pan from heat; set aside.
  • Break matzo sheets into 3-inch pieces, and place in a colander set in the sink. Pour 3 cups boiling water, one cup at a time, over the matzo, and drain.
  • In a medium bowl, whisk eggs. Add salt and remaining 2 tablespoons sugar. Stir in the soaked matzo; mix until well coated.
  • Melt remaining 4 tablespoons butter in a large skillet set over medium-high heat. Add matzo mixture, and cook until golden brown on both sides, about 10 minutes. Stir in two-thirds of the apple mixture until warm; transfer to a serving plate. Garnish with the reserved toasted pecans and the remaining apple mixture. Serve immediately.

RUTH REICHL'S MATZO BREI

Ruth Reichl's Matzo Brei image

Elizabeth Barbone of Troy, New York, writes: "I read Ruth Reichl's 'Letter from the Editor' (April 2004), in which she states that 'matzo brei is one of life's perfect foods,' with great interest. However, no recipe for matzo brei appears. Is there any chance of Gourmet publishing a recipe for this 'perfect' food? I would love to try it."

5 matzos, broken into 2-inch pieces
2 large eggs
1/2 teaspoon salt
1/2 cup granulated sugar
1 Granny Smith apple, peeled and diced
1/2 cup raisins
1/4 teaspoon ground cinnamon
1/2 cup plus 2 tablespoons vegetable oil
Fruit preserves, creme fraiche, honey, or maple syrup, for serving (optional)

  • Heat remaining 2 tablespoons oil in a large skillet over medium-high heat. Spread matzo mixture evenly in skillet, pressing firmly into pan. Cook, undisturbed, for 5 minutes. Cinnamon Roll Matzah Brei image

Cinnamon buns have never been kosher for Passover, until now! Top classic matzah brei pancakes of eggs and matzah with cinnamon, brown sugar and a generous swirl of cream cheese icing to create your new favorite Pesach sweet breakfast!

Provided by Food Network

Categories     main-dish

Time 20m

Yield 2 servings (4 small pancakes)

Number Of Ingredients 14

2 tablespoons unsalted butter, softened
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon kosher salt
4 ounces cream cheese, softened
2 tablespoons unsalted butter, softened,
3/4 cup powdered sugar
1/8 teaspoon kosher salt
2 large eggs
1 tablespoon granulated sugar
1/4 teaspoon kosher salt
2 sheets matzah
3/4 cup milk or water
1 tablespoon unsalted butter

Steps:

  • For the cinnamon roll spread: Use a fork to combine the butter, brown sugar, cinnamon and salt in a medium bowl until combined and uniform. Set aside.
  • For the cream cheese icing: Use a hand mixer to beat the cream cheese and butter in a medium bowl until combined. Then add the powdered sugar and salt and carefully mix until combined and uniform. Spoon into a piping bag with a 1/4- or 3/8-inch nozzle or a ziptop storage bag and snip a small piece off the end, 1/4 to 3/8 inch wide. Set aside.
  • For the matzah brei: In another medium bowl, whisk together the eggs, granulated sugar and salt until uniform.
  • Break the matzah into bite-sized pieces and put into a separate bowl. Pour on the milk until covered and let sit for 30 to 60 seconds, just until softened; you don't want to make the matzah mushy. Drain through a sieve, add the matzah to the egg mixture and mix to combine.
  • Heat a large nonstick pan over medium heat and add half the butter to melt.
  • Spoon a quarter of the matzah mixture (about 1/3 cup) into the pan and form into a flat pancake. Repeat with another pancake if there is room in your pan. Have your cinnamon roll spread ready nearby. Fry the pancakes for 2 minutes, or until the bottoms are cooked but not browned. Flip and immediately spoon 1 tablespoon of the cinnamon roll spread onto the middle of each pancake. Spread around the pancake as it melts, leaving the edges exposed. Fry for 1 more minute, or until cooked through.
  • Repeat with the rest of the matzah mixture and cinnamon roll spread to make another 2 pancakes, adding the remaining butter to the pan. Swirl a generous amount of cream cheese icing onto each pancake and serve immediately with more icing!

MATZO BREI WITH CARAMELIZED APPLES

Matzo Brei with Caramelized Apples image

This recipe is adapted from the restaurant Jane in downtown New York. There, the chef Glenn Harris offers a matzo brei that is an expanded version of his mother's. Mr. Harris's mother, in Brooklyn, made sweet matzo brei with honey or jelly, or matzo meal pancakes the size of silver dollars sprinkled with sugar. His version is much more elaborate, with cubes of caramelized apples, a vanilla-honey sauce and mascarpone.

Categories     quick, snack, pies and tarts, dessert

Time 30m

Yield 6 servings

Number Of Ingredients 9

1/2 cup honey
1 vanilla bean
9 tablespoons unsalted butter
2 Granny Smith apples, peeled, cored and cut into 1/2-inch cubes
2 tablespoons sugar
1 1-pound box matzo
8 large eggs
1 teaspoon kosher salt
4 ounces mascarpone cheese (or yogurt)

Steps:

  • Place honey in a small saucepan or microwavable bowl. Split vanilla bean lengthwise and use tip of knife to scrape seeds into honey. Add bean to honey as well. Gently warm honey over low heat or in microwave until it thins enough to easily pour, about 1 to 2 minutes. Keep warm or reheat before serving.
  • Heat a sauté pan until very hot. Add 2 tablespoons butter, the apples and sugar. Fry, stirring occasionally, until apples are soft and caramelized, 8 to 10 minutes. Transfer to a dish and keep warm.
  • Place matzos in a large bowl and cover with warm water. Soak for 1 minute, then drain, pressing to remove excess water.
  • In a large bowl, lightly beat eggs with salt. Break soaked matzo into large pieces, adding them to eggs, and toss well.
  • Melt 6 tablespoons butter in a 10-inch nonstick pan over medium-low heat. Add matzo and eggs and cook, pressing down on top with a spatula, until crisp on bottom, about 8 minutes. Use a flexible metal spatula to loosen bottom and sides, then invert pan over a plate to flip matzo brei. Add remaining tablespoon butter to pan and swirl to coat bottom. Slide matzo brei back into pan and continue to cook until a crust has formed on bottom and it is cooked through, about 3 to 5 more minutes.
  • Cut matzo brei into 6 pieces. Top each piece with apples and a spoonful of mascarpone, and serve drizzled with honey vanilla sauce.

Yield Makes 2 servings (But just barely)

Number Of Ingredients 5

2 sheets of matzo
2 large eggs
salt
pepper
2 tablespoons vegetable oil

Steps:

  • Break 2 sheets of matzo into 1/2" pieces; place in a medium bowl. Cover with very hot tap water. Let stand for about 30 seconds, then drain. Beat 2 large eggs in another medium bowl; season with salt and pepper. Add drained matzo; mix until combined and a wet batter forms. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Spoon scant 1/4-cupfuls of batter into skillet, making 4 pancakes. Fry, turning once, until golden and just cooked through, about 1 minute per side. Serve with jam, syrup, or whatever the hell you'd like. These rock.

Tips:

  • Use day-old matzo for the best texture. Matzo that is too fresh will be too soft and will break down too much when cooked.
  • If you don't have matzo meal, you can make your own by grinding matzo crackers in a food processor.
  • Be careful not to overcook the matzo brei. It should be cooked until it is just set, but not dry.
  • Feel free to get creative with your toppings. Try adding fresh berries, nuts, or seeds. You could also drizzle the matzo brei with maple syrup or honey.
  • Conclusion:

Matzo brei is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover matzo. This recipe for skillet matzo brei with cinnamon, apple, and raisins is a flavorful and satisfying way to start your day.
