SMOKED HAM WITH SWEET HOLIDAY GLAZE

Steps:
- Season the ham with dry rub. Place plastic wrap over ham and put in refrigerator. Allow the seasoning to penetrate the ham overnight to give it a fuller flavor.
- Using indirect heat, preheat your grill to 250 degrees F. with hickory chips and charcoal.
- Place ham in an aluminum roasting pan and place on grill grates. Let smoke for 3 hours, making sure the temperature remains at 250 degrees F; adding more hickory chips and charcoal, as necessary. Remove to a platter.
- For the glaze:
- Place all ingredients into a saucepan over medium heat. Allow to simmer, cooking for 10 to 15 minutes, until the glaze is syrupy.
- Pour the warm glaze over the warm ham and serve immediately.
- Mix ingredients together and store in an airtight container for up to 6 months.
SMOKED HAM WITH SWEET COUNTRY MUSTARD SAUCE
On the buffet table, put the ham and mustard sauce next to the Caraway-Dill Biscuits so that your guests can make their own little sandwiches. Prepare the sauce one day ahead.

- Whisk sugar and vinegar in medium bowl until sugar dissolves. Whisk in mustards. Season sauce to taste with salt and pepper. Cover and refrigerate sauce 1 day. (Can be prepared 3 days ahead. Keep refrigerated.) Serve ham with sauce.

- In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.

SUSAN'S SWEET MUSTARD SAUCE FOR HAM
This is the best sweet mustard sauce ever. It's a great accompaniment for your cooked ham, or a great dipping sauce (my kids love it on hard boiled eggs). Everyone wanted Susan's recipe... so here it is. It has a bit of bite... but is kid friendly if they don't eat it straight! If you want to be sure it doesn't have too much bite for the kids, decrease dry mustard... maybe to 2 Tablespoons. Yum!

- Cook on low heat (3 or 4 to start).
- Whisk about every 2 minutes until thickened.
