These cookies are soft and chewy and didn't last a day after making them! Once I thought I HATED coconut, but these made me realize I just didn't like overly sweet coconut. These are fabulous! Made with whole wheat flour and oatmeal, it's a better alternative to the traditional cookie.

SOFT & CHEWY OATMEAL RAISIN COOKIES - GLUTEN FREE
A recipe from www.celiac.com that I have altered slightly. If your flour mix does not include xanthan gum, add 1 T of ground flax seed (although you may add it anyway as the outcome of the recipe won't be affected). It is also very important to chill the dough before you bake them - they won't spread as much. NOTE; If you are making this recipe as a non-gluten free recipe using regular all-purpose flour, do not use quick oats as the recipe was made with regular long cooking oats.

SOFT CHOCOLATE OATMEAL COOKIES
From the cookbook "A Chocolate Christmas" this is a bit different from the other recipes posted here with the addition of the milk and cinnamon. Makes for a great holiday cookie but also a cookie for anytime of the year - especially lunch boxes! Sometimes I skip the raisins and just add in chopped walnuts or dried cranberries for an even more unique flavor.

SALLY'S SOFT & CHEWY OATMEAL RAISIN COOKIES
Steps:
- Directions: Using a hand mixer or a stand mixer fitted with paddle attachment, cream the softened butter and both sugars together on medium speed until smooth. Add the egg and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla and molasses and mix on high until combined. Set aside. In a separate bowl, toss the flour, baking soda, cinnamon, and salt together. Add to the wet ingredients and mix on low until combined. Beat in the oats, raisins, and walnuts (if using) on low speed. Dough will be thick, yet very sticky. Chill the dough for 30-60 minutes in the refrigerator (do the full hour if you're afraid of the cookies spreading too much). If chilling for longer (up to 2 days), allow to sit at room temperature for at least 30 minutes before rolling and baking. Preheat oven to 350F degrees. Line two large baking sheets with parchment paper or silicone baking mats. Roll balls of dough (about 1.5 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets. Bake for 10 minutes until very lightly browned on the sides. The centers will look very soft and undone. Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to "set" on the baking sheet during this time. Cover cookies and store at room temperature for up to 1 week. Baked cookies and rolled cookie dough freeze well, up to 3 months. *Room temperature eggs preferred. Good rule of thumb: always use room temperature eggs when using room temperature butter. *Soak your raisins in warm water for 10 minutes before using (blot very well to dry them) - this makes them nice and plump for your cookies. OR even try them with Raisinets!
SOFT CHOCOLATE-ALMOND OATMEAL COOKIES
Credit for the recipe goes to The Weekend Baker, by Abigail Johnson Dodge, my currently favorite cookbook. It yields delicious, soft, cakelike cookies, with added crunch from the toasted almonds. If you don't have any toasted almonds on hand, its easy to do before you start, almond slivers just need a stint the same oven temperature as the recipe requires--350 degrees-- for about 8 minutes. Also, I use the spoon-and-sweep method. Dip-and-sweep will result in too much flour.

Steps:

SOFT OATMEAL COOKIES
Steps:
- Combine the raisins, sultanas, and currants in a bowl, add enough water to cover, and let them soak in the fridge for at least 5 hours or overnight. Drain and discard the water.
- Preheat the oven to 350°F. line a large cookie sheet or baking sheet with parchment paper.
- Put the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. (You can use a handheld electric mixer instead, if you fancy.) Mix on high speed until the mixture is light and fluffy, about 4 minutes. You'll occasionally need to scrape down the butter and sugar that clings to the sides. Crack in one egg and beat for 30 seconds, then add the other egg and beat for 30 seconds more.
- Sift the flour, baking soda, cinnamon, and salt into a medium bowl and stir well. add to the egg mixture, along with the vanilla extract, scrape down the sides of the bowl, and mix at medium speed just until the ingredients are well mixed and the flour is evenly distributed. add the oats, raisins, sultanas, and currants and mix just until they're evenly distributed. Cover the bowl with plastic wrap and pop it in the fridge to chill, at least an hour.
- Use your hands to divide the dough into 16 equal balls (about 2 1/2 tablespoons each) and place half on the lined sheet, leaving about 2 inches between them. Bake for about 20 minutes, rotating the pan after about 10 minutes, just until they go golden brown all over and firm at the edges and no longer feel sticky or gooey when you touch one with your finger. Let the cookies cool on a rack as you bake the second batch.
- Eat the cookies slightly warm, when they're cakey, or when they've cooled completely.
Tips:
- Use old-fashioned oats. These oats will give your cookies a chewy texture.
- Don't overmix the dough. Overmixing will make the cookies tough.
- Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies at a low temperature. This will help them stay soft and chewy.
- Don't overbake the cookies. Overbaking will make them dry and crumbly.
- Let the cookies cool completely before storing them. This will help them keep their shape and texture.
Conclusion:
Oatmeal cookies are a delicious and easy-to-make treat that can be enjoyed by people of all ages. By following the tips in this article, you can make soft and chewy oatmeal cookies that are sure to be a hit with your family and friends.
