Tips:

  • Use fresh cranberries for the best flavor and texture. Frozen cranberries can also be used, but they should be thawed and drained before using.
  • If you don't have walnuts, you can substitute chopped pecans, almonds, or another type of nut.
  • For a sweeter cake, increase the amount of sugar in the recipe. For a less sweet cake, decrease the amount of sugar.
  • To make sure the cake is cooked through, insert a toothpick into the center of the cake. If the toothpick comes out clean, the cake is done. If the toothpick comes out with batter or crumbs attached, the cake needs to bake for a few minutes longer.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.

The walnuts add a nice crunch and texture, and the cream cheese frosting is the perfect finishing touch. This cake is sure to be a hit with everyone who tries it.
