SUGAR SNAP PEA SALAD WITH RADISHES, MINT AND RICOTTA SALATA

Sugar Snap Pea Salad With Radishes, Mint and Ricotta Salata image

There's a reason pea salad is usually slathered in mayonnaise. Just try to get those tiny rolling orbs to stay on your fork without it. That's why when it comes to pea salads, choose sugar snaps. They have the same bright sweetness as shelled peas but, eaten pod and all (no shucking required), they're easier to grab. Here, raw sugar snap peas are tossed with radishes, fresh mint, ricotta salata and a simple lemon-balsamic vinaigrette for a easy salad that's sweet, salty, creamy and fresh tasting.

SUGAR SNAP PEA AND RADISH SALAD

Sugar Snap Pea and Radish Salad image

From Ladies Home Journal article on Katie Lee Joel (Billy Joel's wife). I am a radish lover and will try this delicious sounding summer salad.

Provided by SweetSueAl

Categories     Vegetable

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

3/4 lb sugar snap pea, trimmed
2 cups radishes (half cut into quarters, remaining thinly sliced)
2 tablespoons chives, fresh, minced
3 tablespoons extra virgin olive oil
1 tablespoon cider vinegar
1 teaspoon honey
1 teaspoon kosher salt
1/2 teaspoon pepper, freshly ground

Steps:

  • Bring medium pot of salted water to a boil. Blanch peas until just tender and bright green, about 3 minutes.
  • Drain and transfer to a bowl of ice water to cool; drain well.
  • In a large salad bowl, combine peas, radishes and chives.
  • For Vinaigrette: In a small jar or container with a tight-fitting lid, shake together oil, vinegar, honey, salt, and pepper.
  • Toss salad with vinaigrette and serve.

Tips:

  • Choose fresh and crisp vegetables: Select bright green, firm peas and radishes without blemishes or wilting. Fresh vegetables will have a better flavor and texture in the salad.
  • Prepare the vegetables properly: Trim the radishes and slice them thinly. If using sugar snap peas, remove the strings from the sides. Blanch the peas and radishes briefly in boiling water to enhance their color and flavor.
  • Use a light and flavorful dressing: A simple vinaigrette or lemon-based dressing is a good choice for this salad. Avoid heavy or creamy dressings, as they can overpower the delicate flavors of the vegetables.
  • Add some herbs or nuts for extra flavor: Fresh herbs like mint or dill, or toasted nuts like almonds or walnuts, can add extra flavor and texture to the salad.
  • Serve the salad chilled: This salad is best served chilled, so refrigerate it for at least 30 minutes before serving.

Conclusion:

Spring pea and radish salad is a refreshing and colorful dish that is perfect for a light lunch or side dish. It is packed with fresh vegetables and has a light and flavorful dressing. This salad is also a good source of vitamins and minerals, making it a healthy choice. With its vibrant colors and delicious flavor, this salad is sure to be a hit at your next gathering.
