SWEET FRUIT PIZZA THAT LOOKS LIKE A REGULAR PIZZA!

Sweet Fruit Pizza That Looks Like a Regular Pizza! image

There are a lot of fruit pizza recipes out here, but this one has a twist, it uses a regular pizza dough crust (I use recipe #117941 with 1/2 cup sugar added and it makes two pizza crusts), and the toppings make it look like a "regular pizza." Really good and super fun for kids to make too. And as a bonus, if you are careful about the white chocolate you use, I think it could be considered vegan. Feel free to experiment!

Time 40m

Yield 1 Pizza, 8 serving(s)

Number Of Ingredients 5

1 pizza crust
1/2 cup strawberry jam (or raspberry, or any red jam or jelly)
3 ounces white chocolate (or use almond bark)
1/4 cup walnuts, chopped
4 strawberries

Steps:

  • Make pizza dough according to directions but add about 1/2 cup extra sugar to make it sweet. Bake the dough empty. Cool.
  • Spread with jam/jelly.
  • Using a potato peeler or grater, add enough white chocolate shavings to look like cheese.
  • Sprinkle on walnuts to look like sausage.
  • Slice strawberries to look like pepperoni slices.
  • Sprinkle with green sugar or other green cookie sprinkles if you want to simulate oregano.
  • I find that it looks best the first day. But tastes great even if the strawberries dry out a little --
  • Enjoy!

"Like everyone else, I enjoy desserts...but not the calories that come with them," writes the student from Madison, Wisconsin. "My roommates and I don't feel guilty about gobbling down a pizza with good-for-you toppings like strawberries, Kiwifruit and pineapple."

Time 30m

Yield 8

Number Of Ingredients 11

1 (18 ounce) package refrigerated sugar cookie dough
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed
2 cups sliced fresh strawberries
½ cup white sugar
1 pinch salt
1 tablespoon cornstarch
½ cup orange juice
2 tablespoons lemon juice
¼ cup water
½ teaspoon orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Slice cookie dough and arrange on greased pizza pan, overlapping edges. Press dough flat into pan. Bake for 10 to 12 minutes. Allow to cool.
  • In a large bowl, soften cream cheese, then fold in the whipped topping. Spread over cooled crust. You can chill for a while at this point, or continue by arranging the fruit.
  • Begin with strawberries, sliced in half. Arrange in a circle around the outside edge. Continue with fruit of your choice, working towards the middle. If bananas are used, dip them in lemon juice so they don't darken. Then make a sauce to spoon over fruit.
  • In a saucepan, combine sugar, salt, corn starch, orange juice, lemon juice and water. Cook and stir over medium heat. Bring to a boil, and cook for 1 or 2 minutes, until thickened. Remove from heat, and add grated orange rind. Allow to cool, but not set up. Spoon over fruit. Chill for two hours, then cut into wedges and serve.

FRUIT PIZZA

Fruit Pizza image

It looks like a pizza -- but it sure doesn't taste like one. There's a chewy crust, soft whipped topping, and then fruit -- lots of fresh fruit. Recipe is from The Cake Mix Doctor by Anne Byrn, who suggests prebaking the crust, then setting out the whipped topping and bowls of prepared fruit for a gret backyard birthday party activity.

Number Of Ingredients 12

1 (18 1/4 ounce) package yellow cake mix
1/4 cup water
1/4 cup packed light brown sugar
4 tablespoons butter, melted (1/2 stick)
2 large eggs
1 (16 ounce) container frozen whipped topping, thawed
2 cups sliced fresh strawberries
2 cups thinly sliced bananas
1 cup sliced kiwi
1 cup seedless grapes, halver
1/2 cup apricot preserves
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees F. Place one rack in the top of the oven and another in the center. Spray two 12- to 14-inch pizza pans or one 16- by 11-inch jelly roll pan with vegetable oil spray. Line pans with parchment paper or waxed paper and lightly mist with the oil spray, then dust with flour.
  • Place the cake mix, water, brown sugar, butter and eggs in a large mixing bowl. Blend with electric mixer on low speed until well blended, 1-2 minutes. The dough will be stiff and sticky. With rubber spatula, spread the dough onto the bottom and sides of the prepared pans. Place one pizza pan on each rack of the oven or, if using the jelly-roll pan, place on center rack.
  • Bake until crust is light brown and feels firm in the center when lightly pressed with your finger, 18-22 mniutes. Take care not to overbake the crust on the top rack. remove pans from oven and place on wire racks to cool completely, 1 hour.
  • For the topping, spread the cooled pizza crusts with the whipped topping and then arrange the fruit over the top in concentric circles. If using the jelly roll pan, mix the fruit together in a medium bowl and spoon it evenly over the topping.
  • Place the apricot preserves and the water in a small saucepan over low heat, and stir until mixture warms. Remove pan from heat and strain, discarding apricot solids. Brush the strained glaze over the fruit. Place the pizzas in the refrigerator and chill, uncovered, until serving time, at least 1 hour.
  • Leftovers may be stored in the refrigertor, covered with plastic wrap, for up to 1 week.

Tips:

  • For the best results, use fresh fruit that is in season. This will ensure that the fruit is ripe and flavorful.
  • If you are using frozen fruit, be sure to thaw it completely before using. This will help to prevent the fruit from becoming icy and watery.
  • Use a variety of fruits to create a colorful and flavorful pizza. Some good options include strawberries, blueberries, raspberries, blackberries, bananas, and pineapple.
  • Be sure to slice the fruit thinly so that it cooks evenly.
  • If you are using a store-bought pizza crust, be sure to pre-bake it according to the package directions. This will help to prevent the crust from becoming soggy.
  • Spread the cream cheese mixture evenly over the pizza crust. This will help to hold the fruit in place.
  • Arrange the fruit slices on the pizza in a circular pattern. Be sure to leave a little space between the fruit slices so that they can cook evenly.
  • Bake the pizza until the fruit is heated through and the cream cheese mixture is melted. This will usually take about 15-20 minutes.
  • Let the pizza cool for a few minutes before slicing and serving. This will help to prevent the fruit from falling off the pizza.
