4 soft, very ripe bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 9-by-5-inch loaf pan.
  • Spread the macadamia nuts on one rimmed baking sheet and the coconut on another. Toast, tossing occasionally, until the macadamia nuts and coconut are golden, 5 to 7 minutes. Let the nuts cool, then roughly chop.
  • Whisk together the flour, granulated sugar, baking soda, cinnamon, salt, nutmeg, macadamia nuts and coconut in a large bowl. 1 tablespoon unsalted butter
1/4 cup sugar
2 tablespoons cornstarch

1 cup chopped pineapple chunks
15 vanilla wafers
Toasted coconut flakes, for garnish

Steps:

  • Put the coconut milk and butter in a medium saucepan over medium-low heat, stirring gently to melt the butter and heat the milk.
  • Whisk together the sugar, cornstarch and 2 tablespoons water in a separate bowl to create a thick paste. Gently whisk into the milk and increase the heat to medium. Cook, stirring often, until thick and bubbly, 10 to 12 minutes.
  • Remove from the heat and stir in the vanilla extract. Let cool to room temperature, then transfer to a bowl and cover with plastic wrap, pressing the wrap directly against the surface. Refrigerate until set, 3 to 4 hours.
  • Beat the whipping cream with an electric mixer until stiff peaks form.

5 large bananas, ripe
1/2 cup raisins
1 lemon, zest of
1 lemon, juice of
1 cinnamon stick
1/2 vanilla bean, split
1 tablespoon dark rum
1/4 cup dark brown sugar (adjust to taste)
1 tablespoon cornstarch
1 tablespoon banana liqueur or 1 tablespoon dark rum
1 tablespoon butter, melted
1 tablespoon light olive oil or 1 tablespoon canola oil
1/4 cup cinnamon graham cracker crumbs (plus extra to sprinkle on top) or 1/4 cup dry breadcrumbs (plus extra to sprinkle on top)
1/4 cup granulated sugar
8 sheets phyllo dough

Steps:

  • FILLING:.
  • Thinly slice bananas and put in heavy nonreactive saucepan.
  • Add raisins, lemon juice and zest, cinnamon, vanilla, rum, brown sugar and stir to combine.
  • Cook over medium heat until bananas are just tender, 2-4 minutes.
  • Correct sweetness if necessary.
  • In a small bowl, stir cornstarch into banana liqueur (or rum).
  • Pour into the banana mixture and simmer 30 seconds or until mixture thickens.
  • Let cool to room temperature and remove cinnamon stick and vanilla bean.
  • Refrigerate until cold.
  • STRUDEL DOUGH:.
  • Preheat the oven to 375 degrees.
  • In a small bowl, combine melted butter and oil.
  • In a separate small bowl combine cracker crumbs and sugar.
  • Following the directions on the filo dough box, prepare surface and dough (using damp cloth, etc.), alternately brush dough with butter mixture and one level tablespoon of the crumb mixture. Repeat until you have used four sheets of the filo dough.
  • Mound half of the banana filling in a row along the long edge of dough closest to you. Roll up halfway.
  • Fold in the short ends and continue to roll the strudel.
  • Carefully transfer it, seam side down to an ungreased baking sheet.
  • Prepare the second strudel in the same manner.
  • Brush the tops with the rest of the butter mix and sprinkle with the rest of the crumb mix.
  • Using a sharp knife, lightly score the tops of the strudels (do not cut through to the filling!).
  • Bake until crispy and golden brown, 30-40 minutes.
  • Cool slightly and cut into diagonal slices with serrated knife.

I didn't have any cream cheese to make a regular frosting, so I used the broiled frosting recipe my om had given me. Very easy, good flavors together. Makes a nice rustic presentation if you do it in layers. I included the cooling time in the prep time.

1 1/2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda

1 cup brown sugar
8 tablespoons butter or 8 tablespoons margarine, softened

Steps:

  • Mix the dry ingredients for the cake in a large bowl.
  • Add the banana, buttermilk and shortening, mix on medium with an electric mixer.
  • Add the eggs and vanilla, mix until well incorporated.
  • Pour batter into 1 9x13" pan which has been greased and floured, or 2 8" pans that have been greased and floured.
  • Bake at 350 for 35 minutes or until a cake tester comes out clean.
  • Remove cakes from oven and cool.
  • For 8" layers, cool 10 minutes in the pans, turn out onto racks and cool completely.
  • Frosting----------.
  • Mix the brown sugar with the butter until combined.
  • Add milk and mix until combine.
  • Add pecans and coconut.
  • For a 9x13 cake-------.
  • Cover the cake with the frosting mixture and put under a broiler for 3-4 minutes.
  • For the layer cake: Put the layers on a cookie sheet and spread each one with half of the frosting.
  • Broil for 3-4 minutes.
  • Let cool completely before assembling the cake.
  • This makes a very good, rustic looking layer cake.

1 teaspoon salt
1 1/2 teaspoons baking powder
2/3 cup light brown sugar
1 egg
1 ripe banana, mashed with
1 tablespoon orange juice or 1 tablespoon juice, of choice
2/3 cup unsweetened applesauce
1/2 cup nuts or 1/2 cup chocolate chips, if desired (puts more fat into recipe)
12 tablespoons confectioners' sugar
1 tablespoon citrus juice (you can use the same as above or make it different for a twist)
1/2 cup sweetened coconut, shavings

Steps:

  • Grease a loaf pan and preheat the oven to 350 degrees F.
  • In a large mixing bowl, mix the flour, salt, baking powder and sugar.
  • In a separate bowl, mix the egg, banana/citrus juice mixture, unsweetened apple sauce and nuts or chocolate chips (if desired) until well mixed, but not completely smooth.
  • Mix the wet ingredients into the dry mixture until batter is smooth and pourable.

1/2 cup vegetable oil
1 cup white granulated sugar
2 eggs (vegan option use 1/2 cup apple sauce)
1 teaspoon vanilla extract
1 teaspoon almond extract
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 extra ripe bananas, mashed.
2 1/2 cups all-purpose flour
1 cup canned unsweetened coconut milk, full fat
1 cup sweetened shredded coconut flakes
1/2 cup - 3/4 cup diced maraschino cherries (after chopping, let cherries rest on paper towels to absorb the extra juice or bread will turn pink)

Steps:

  • Preheat oven to 350*F Grease 2 9x5 loaf pans and set aside. In a bowl combine oil and sugar. Add eggs (or apple sauce) and mix well. Add vanilla extract and almond extract, mix again. Add baking powder, baking soda and salt. Mix again. Add mashed bananas and mix well, scraping sides of bowl as needed. In a separate bowl, stir together the mashed banana and the coconut milk. Alternately add flour & coconut milk, starting and ending with flour, mixing well after each addition until combined. Add Coconut and mix again. Add cherries and gently mix again. Pour batter into your two prepared pans. Bake for 1 hour. If toothpick inserted to center of loaf comes out wet bake for additional 15 minutes or until tested toothpick comes out clean. Let loaves rest for 10 minutes before removing from pans and allowing to cool on racks.

1 cup chopped dried mango
1 cup pretzel sticks, broken in half
½ cup macadamia nuts
½ cup coconut flakes
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
1 tablespoon honey
1 tablespoon butter
¼ teaspoon flaky sea salt (such as Maldon®)

Steps:

  • Combine cashews, pineapple, mango, pretzels, macadamia nuts, coconut flakes, and cranberries in a large bowl; stir to combine.
  • Add honey and butter to a small saucepan over medium heat. Cook and stir until butter is melted, about 1 minute. You also could do this in the microwave.
  • Drizzle honey-butter over snack mix and sprinkle salt over the top. Stir well to make sure everything is well coated.

2 bananas
2 tablespoons peanut butter
1/4 cup shredded coconut
honey

Steps:

  • Peel bananas; cut in half crosswise and then lengthwise.
  • Spread with peanut butter.
  • Put coconut on a plate and dip bananas in it and coconut will stick to the peanut butter.
  • Arrange on a plate and drizzle honey over the pieces.
  • Serve alone or with other fruit.
