Healthy vegan "meat" loaf. Try it with the peanut butter option. It's great, better than it sounds. Pour your favorite gravy, sauce or salsa over the top.

Steps:
- Preheat oven to 350.
- Soften oatmeal in 1/2 cup water while chopping vegs. Do not drain off water.
- In a big bowl, thoroughly combine ALL ingredients.
- Optional: Add 2 tablespoons natural peanut butter to the mixture.
- Grease loaf pan(s). Bake up to 45 minutes depending on size of loaf pans. When a test knife comes out clean, it's done. I bake it in mini foil pans and freeze extras.

Steps:
- Whisk wheat gluten, bean flour, nutritional yeast, thyme, oregano, and salt together in a medium bowl.
- Whisk 1 cup broth, tamari, liquid smoke, and sesame oil together in a small bowl. Add to dry ingredients and stir until well combined. A dough will start to form.
- Knead for 5 minutes, then form into a log shape about 2 inches in diameter and 8 inches long. Wrap with cheesecloth.
- Place in a multi-functional pressure cooker (such as Instant Pot®) with remaining broth. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Remove seitan and let cool slightly before slicing and serving.

Steps:
- Stir vital wheat gluten, nutritional yeast, 1/2 cup vegetable broth, liquid amino acid, olive oil, and garlic in a bowl until ingredients come together into a ball. Knead ball until dough has a rubbery texture. Divide dough into 3 equal pieces and shape into 1/2-inch thick patties.
- Bring 4 cups vegetable broth, water, and tamari to a boil in a large pot. Carefully place patties into boiling broth; cover pot and return to a boil. Set lid slightly askew to vent steam and reduce heat to low. Continue simmering patties until firm, turning patties occasionally, about 1 hour. Remove pot from heat and set lid aside. Allow patties to cool in broth for 15 minutes before serving.
