Yield Serves 4

1 tablespoon white wine vinegar
1/4 cup olive oil (preferably extra-virgin)
4 cups fresh arugula
4 cups bite-size pieces of frisée or chicory

Steps:

  • Whisk grapefruit juice and vinegar in large bowl. Whisk in oil. Season vinaigrette to taste with salt and pepper. Add arugula and frisée. Toss greens to coat with vinaigrette. Serve immediately.

Tips:

  • Fresh is best: Use the freshest winter greens you can find for the best flavor and texture.
  • Wash thoroughly: Be sure to wash your greens thoroughly before using them to remove any dirt or debris.
  • Dry completely: After washing your greens, dry them thoroughly to prevent the vinaigrette from getting watery.
  • Use a light hand with the vinaigrette: A little vinaigrette goes a long way, so start with a small amount and add more to taste.
  • Serve immediately: This salad is best served immediately after it is made, as the greens will start to wilt if they sit for too long.

Conclusion:

This winter greens salad with cranberry-port vinaigrette is a delicious and healthy way to enjoy the flavors of the season. It is packed with nutrients and antioxidants, and the vinaigrette adds a sweet and tangy flavor that complements the greens perfectly. This salad is perfect for a light lunch or dinner, or as a side dish for a holiday meal.
