This recipe is a great way to cook chicken for meal prep. I like to poach a few chicken breasts on the weekend and then use them throughout the week in salads, sandwiches, and wraps.

I'm not a fan of the texture of poached chicken, but the flavor of this recipe was amazing. I would definitely make it again, but I would cook the chicken for a shorter amount of time.

I like to add a few vegetables to the poaching liquid, such as carrots, celery, and onion. It gives the broth even more flavor.
