  • Line a baking pan with foil; set aside. Steps:

2 ½ cups white sugar
2 teaspoons vanilla extract
8 eggs
7 teaspoons baking powder
8 cups all-purpose flour
2 teaspoons anise extract
3 teaspoons anise seed
1 cup chopped walnuts
2 egg yolks, lightly beaten

Steps:

  • Preheat oven to 375 degrees F ( 190 degrees C ).
  • In a large bowl, cream together butter and sugar Gradually add the vanilla and eggs while mixing. Sift together the flour and baking powder; stir into the egg mixture. For plain biscotti, do not add anything else (see Cook's Note). Stir in the anise extract and anise seed. Add walnuts if desired.
  • Wet or grease your hands and shape dough out into 4 logs as long as your baking sheet will allow. Pat each one to about 3/4 inch in height, and 3 inches wide. Brush with beaten egg yolks.
  • Bake in the preheated oven for 15 minutes, until golden brown. Slice logs at an angle, cutting pieces into 1/2 to 3/4-inch wide cookies. Place slices back onto the cookie sheet, standing upright, if possible; leave a gap between the slices. Return to the oven and bake until cookies are dry and lightly toasted, about 10 minutes more.

  • Line a heavy large baking sheet with parchment paper.

2 teaspoons baking powder
1 cup sugar
1/2 cup vegetable oil
2 teaspoons anise seed
2 cups flour

Steps:

  • Beat eggs, sugar, and oil. Mix in flour, baking powder, vanilla, and anise. Spread in greased metal ice cube trays or loaf pans. If using loaf pans, only fill 1/3 full. This recipe makes about 3 trays or pans worth.
  • Bake 20-25 minutes at 350 degrees. Remove from oven and cut in slices crosswise. Place slices on baking sheet and brown under broiler, then flip slices and brown on other side. Watch the cookies carefully, it is easy to burn them in this step. Normally the best idea is to broil with oven door open a crack and watch as they go.

Steps:

  • Preheat oven to 375°F. Line large rimmed baking sheet with parchment paper. Mix first 8 ingredients in large bowl. Whisk eggs and all remaining ingredients in medium bowl to blend. Add egg mixture to flour mixture and stir until moistened; gather dough together. Turn dough out onto baking sheet and shape into 12-inch-long by 3-inch-wide log.
  • Bake log until golden brown and firm to touch, about 30 minutes. Transfer to rack and cool log on baking sheet 30 minutes. Reduce oven temperature to 250°F. Using long metal spatula, carefully transfer log to work surface. Using serrated knife, cut crosswise into 1/4-inch-thick slices. Place slices, cut side down, on 2 clean rimmed baking sheets.

3/4 cup unblanched sliced almonds (6 ounces)
1 1/2 teaspoons anise seed
1 cup granulated sugar
1/3 cup lemon zest, finely grated
2 cups all-purpose flour
1 1/2 tablespoons ground coriander
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, room temperature
2 large eggs

Steps:

  • Make sure there is a rack in the middle slot of the oven. Preheat oven to 350 degrees F. Butter 1 large nonstick baking sheet & have 1 ungreased baking sheet ready.
  • Toast almonds on the ungreased baking sheet for 10 minutes, or until golden brown.
  • In a small skillet, toast the aniseed, shaking the pan, over medium heat for 3 minutes or until fragrant.
  • Process sugar & zest in a food processor until zest is finely ground.
  • In a medium bowl, whisk together the flour, coriander, baking powder & salt.
  • In a medium bowl with an electric mixer, beat butter & suger mixture together, beginning on low speed & increasing to medium-high, until combined well.
  • Add the eggs, one at a time, beating well after each addition, then reduce the speed to low & add flour mixture & aniseed, beating just until blended.
  • With a rubber spatula, stir in the almonds.
  • Halve the dough & place both portions on the buttered baking sheet.
  • Quickly form each piece into a 12:x1" log, & place them at least 3 inches apart on the buttered baking sheet, then smooth the 2 logs with dampened fingers.
  • Bake for 35 minutes, turning the baking sheet once, or until logs are golden brown & beginning to crack on top.
  • Let cool on the baking sheet for 10 minutes, then transfer logs to a cutting board & with a sharp knife, cut each log into 1/8-inch slices.
  • Arrange slices on the same baking sheet & return to the oven.
  • Bake for about 16 minutes, turning the cookies over halfway through the baking, until crisp & golden brown on both sides.
  • Let cool on a wire rack, then store in an airtight container for up to 1 month.

3 egg substitute or 6 egg whites
2 tablespoons lemons, zest of, grated 1 Tbsp dry zest
1 tablespoon lemon juice

Steps:

  • Preheat oven to 325F.
  • Coat baking sheet with non-stick spray or parchment. In a medium bowl, combine flour, sugar, anise seeds, baking powder, baking soda, and salt. Whisk together egg equivalents, lemon zest, and lemon juice, and add to the dry ingredients.
  • Mix well.
  • Working on a floured surface, shape dough into two logs, each about 14 inches long and 1- 1/2 inches thick.
  • Set the logs on prepared baking sheet, at least 4 inches apart (the dough will spread during baking). Bake for 20 to 25 minutes, until firm to the touch.
  • Transfer the logs to the rack to cool.

MOROCCAN FEKKA COOKIES (ANISE BISCOTTI)

This is a delightful snack cookie (much like a biscotti) that is most often enjoyed while having tea or espresso. Fekkas are baked twice, and for this recipe the anise and raisins give it a very distinct Moroccan flavor. The recipe was given to me by a graduate student who was enrolled in our doctoral program while I was working at a major research university many years ago. It is the dish that she most often brought to the potluck gatherings that we periodically hosted for our graduate students. Needless to say, the mix of nationalities represented among our student body usually promised a very eclectic mix of cuisines at our social gatherings. But these were always my favorite, and I finally thought to ask her for the recipe. I hope you enjoy it as much as I do. Most of the prep time is cooling/drying time.

1 cup sugar
1 cup cooking oil
2 cups finely chopped walnuts
1 cup raisins

Number Of Ingredients 10

6 large eggs
1 c granulated sugar
1 c cooking oil
2 c finely chopped walnuts
1 c raisins
1 Tbsp anise extract or anise oil
1 1/3 Tbsp baking powder (equals 1 tablespoon + 1 teaspoon)
3/4 tsp baking soda
1 tsp vanilla extract
6 c all-purpose flour

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Beat eggs and sugar until mixture is white. Add oil, and beat until well mixed. Add the walnuts, raisins, anise, baking powder, baking soda, and vanilla, mixing well while adding flour in small bits at a time.
  • 3. Shape dough into 6 small loaves, each about 2 inches in diameter and 8 inches long. Place loaves on a greased baking sheet about 1 inch apart. Bake in a 350º oven for 12 to 15 minutes or until light brown. Cool; let stand about 8 hours.
  • 4. Use a sharp knife to cut loaves into 1/2-inch slices. Place the slices on an ungreased baking sheet, and bake in a 350º oven just until a light golden brown (about 8-12 minutes). Let the fekkas cool a bit, then transfer cookies to a rack to cool completely.
  • 5. The fekkas can be stored in an airtight plastic container for up to a month, or they will keep well in the freezer for several months. Serve as a snack while you're enjoying a hot cup of your favorite tea, coffee, or espresso.

These are crunchy on the outside and at the same time, tender...not anything like those rock-hard ones you buy at the store. As you know these "twice-baked" cookies go great with a cup of coffee, espresso, tea or a glass of wine. And if anise isn't your favorite flavor, just switch to almond, lemon, orange or vanilla.

5 eggs
1 c vegetable oil
1 c sugar
3 tsp anise extract or 1 tsp. anise oil
4 c flour
3 tsp baking powder
dash of salt

Steps:

  • 1. Preheat the oven to 350'F . Grease cookie sheets or line with parchment paper.
  • 2. In a medium bowl, beat together the eggs, oil, sugar and anise flavoring until well blended. (Here's where you can use your imagination and add chocolate chips, white chocolate, dried cherries, cranberries, chopped nuts (pistachio are delicious), or any number of goodies.)
  • 3. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into two pieces. (It will be a bit sticky, but will still keep it's shape.)
  • 4. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2 inch thickness.
  • 5. Bake for 20 - 25 minutes in the preheated oven, until golden brown. Remove from the baking sheet to cool on a wire rack. When The cookies are cool enough to handle, slice each one crosswise into 1/2 inch slices. Place the slices cut side up back onto the baking sheet.
  • 6. Bake for an additional 6 to 10 minutes on each side. Watch carefully, or they will burn. Slices should be lightly toasted.
  • 7. Store in an airtight container. (They make great gifts, too!)
  • 8. Variations: -Change extract to almond; add 1 c. chopped pistachios, 1/2 cup dried cranberries and 1 c. chopped white chocolate to dough. -Use almond extract, 1 c. slivered almonds, 1/2 c. chopped dried apricots -Use vanilla or almond extract & cut back to 3 1/2 c. flour; add 1/2 cup cocoa, 1 cup chocolate chips (you can also add dried cherries, or dip the finished biscotti in melted dark chocolate)

2 eggs
1/2 c sugar
1/2 c oil
1 Tbsp anise flavor or more if you like
1 1/2 tsp baking powder
2 c flour

Steps:

  • 1. Preheat oven to 350. Blend eggs, sugar, oil, anise flavor and Baking Powder.
  • 2. Add flour 1/2 cup at a time.
  • 3. Dough will be very sticky, wet hands with warm water and shape into a log and place on greased cookie sheet. bake 25-30 minutes, you want to see a slight tan to the edge of log.
  • 4. Remove from oven and cool about 5 minutes. With a serrated knife cut on a diagonal, and place back on cookie sheet, bake 15-20 minutes turning once. Cool on rack.

1/4 Cup anise-flavored liqueur

  • * Mix sugar with butter, anise seed, anise liqueur, bourbon, and nuts. * Beat in the eggs. * Sift and measure flour after sifting. * Sift again with baking powder into the sugar mixture. * Blend thoroughly. * Cover and chill the dough for 2-3 hrs.(Yes, really! My mom would say "follow the directions if you want it turn out right") * On a lightly floured board, shape dough with your hands to form flat loaves that are about 1/2 inch thick and 2 inches wide. * Make the loaves as long as your cookie sheets. * Place no more than 2 loaves, parallel and well apart on a buttered cookie sheet. * Bake in 375 oven for 20 minutes. * Remove from the oven and let loaves cool on pans until you can touch them. * Cut diagonal slices that are about ½ to ¾ inch thick. * Lay slices on cut sides. Keep them close together on cookie sheet. * Return to the oven (375 degrees) for 15 minutes more or until lightly toasted. * Cool on wire racks.
